  1. 1. Cut the avocado in half and remove the pit.
  2. 2. Carefully scoop the flesh out of the skin with a spoon.
  3. 3. Cut the lime in half and squeeze out the juice.
  4. 4. Peel the garlic clove and cut it into quarters.
  5. 5. Wash the basil and spring onions and pat them dry.
  6. 6. Cut off the tough root end of the spring onions.
  7. 7. Roughly chop the rest of the spring onions into rings.
  8. 8. Place the avocado, lime juice, olive oil, basil, garlic, and spring onions into a tall container.
  9. 9. Blend the ingredients with a hand blender until creamy.
  10. 10. Season the dressing to taste with salt and pepper.
  11. 11. If the dressing is too thick, stir in a little cold water and blend it briefly again.
