  1. 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
  2. 2. Wash the basil and shake it dry.
  3. 3. Pluck the leaves from the stems and chop them finely.
  4. 4. Place the basil leaves in a bowl.
  5. 5. Add a pinch of salt and three tablespoons of olive oil.
  6. 6. Mix everything well together.
  7. 7. Halve the shallot and peel it.
  8. 8. Cut the shallot into thin rings.
  9. 9. Wash the peaches and halve them.
  10. 10. Remove the pit from the peach halves.
  11. 11. Cut the peaches into thin wedges.
  12. 12. Wash the tomatoes.
  13. 13. Slice the tomatoes into thin rounds.
  14. 14. Drain the halloumi.
  15. 15. Slice the halloumi.
  16. 16. Place the baguette on a baking sheet.
  17. 17. Bake the baguette in the oven for ten minutes.
  18. 18. Heat two tablespoons of olive oil in a pan over medium heat.
  19. 19. Add the tomatoes, peaches, and shallots to the pan.
  20. 20. Drizzle honey over the vegetables and fruit.
  21. 21. Add one tablespoon of balsamic vinegar.
  22. 22. Fry the ingredients for about two minutes on each side.
  23. 23. Season the mixture lightly with salt and pepper.
  24. 24. Take four tomato slices and seven peach wedges.
  25. 25. Place the fruit and vegetables together with the cooking juices in a tall container.
  26. 26. Add one tablespoon of the basil oil.
  27. 27. Blend the mixture into a ketchup.
  28. 28. Season the ketchup with salt and pepper to taste.
  29. 29. Set aside the remaining vegetables in a bowl.
  30. 30. Wipe the pan clean.
  31. 31. Remove the baguette from the oven.
  32. 32. Heat another two tablespoons of olive oil in the pan over medium heat.
  33. 33. Fry the halloumi slices for about two minutes on each side until golden brown.
  34. 34. Let the halloumi drain on kitchen paper.
  35. 35. Halve the cooled baguette.
  36. 36. Slice the halves lengthwise.
  37. 37. Spread one side of the baguette with the homemade ketchup.
  38. 38. Drizzle the other side of the baguette with the remaining basil oil.
  39. 39. Top the sandwich with the fried tomatoes, halloumi, peaches, and shallots.
  40. 40. Fold the sandwich together.
  41. 41. Serve the sandwich immediately.
