🍽️ Summer Sandwich with Peach, Tomato and Halloumi, with Basil Oil and Homemade Ketchup

Ingredients
- Basil, fresh 30 g
- Salt pinch
- Olive oil 7 tbsp
- Shallots 1 pc.
- Peaches 3 pcs.
- Vine tomatoes 2 pcs.
- Halloumi grill cheese 400 g
- Baguette 2 pcs.
- Honey 1 tbsp
- Balsamic vinegar, light 1 tbsp
- Pepper, black ground pinch
Instructions
- 1. Preheat the oven to 220 degrees Celsius using top and bottom heat.
- 2. Wash the basil and shake it dry.
- 3. Pluck the leaves from the stems and chop them finely.
- 4. Place the basil leaves in a bowl.
- 5. Add a pinch of salt and three tablespoons of olive oil.
- 6. Mix everything well together.
- 7. Halve the shallot and peel it.
- 8. Cut the shallot into thin rings.
- 9. Wash the peaches and halve them.
- 10. Remove the pit from the peach halves.
- 11. Cut the peaches into thin wedges.
- 12. Wash the tomatoes.
- 13. Slice the tomatoes into thin rounds.
- 14. Drain the halloumi.
- 15. Slice the halloumi.
- 16. Place the baguette on a baking sheet.
- 17. Bake the baguette in the oven for ten minutes.
- 18. Heat two tablespoons of olive oil in a pan over medium heat.
- 19. Add the tomatoes, peaches, and shallots to the pan.
- 20. Drizzle honey over the vegetables and fruit.
- 21. Add one tablespoon of balsamic vinegar.
- 22. Fry the ingredients for about two minutes on each side.
- 23. Season the mixture lightly with salt and pepper.
- 24. Take four tomato slices and seven peach wedges.
- 25. Place the fruit and vegetables together with the cooking juices in a tall container.
- 26. Add one tablespoon of the basil oil.
- 27. Blend the mixture into a ketchup.
- 28. Season the ketchup with salt and pepper to taste.
- 29. Set aside the remaining vegetables in a bowl.
- 30. Wipe the pan clean.
- 31. Remove the baguette from the oven.
- 32. Heat another two tablespoons of olive oil in the pan over medium heat.
- 33. Fry the halloumi slices for about two minutes on each side until golden brown.
- 34. Let the halloumi drain on kitchen paper.
- 35. Halve the cooled baguette.
- 36. Slice the halves lengthwise.
- 37. Spread one side of the baguette with the homemade ketchup.
- 38. Drizzle the other side of the baguette with the remaining basil oil.
- 39. Top the sandwich with the fried tomatoes, halloumi, peaches, and shallots.
- 40. Fold the sandwich together.
- 41. Serve the sandwich immediately.
