🥗 Summer Salad with Raspberries, Melon, and Lemon Dressing

Ingredients
- salad mix 240 g
- basil, fresh 25 g
- watermelon 500 g
- raspberries, fresh 250 g
- onions, red 1 pc.
- lemons 1 pc.
- brie 180 g
- vegetable broth 50 ml
- olive oil 1 tbsp
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Wash the salad thoroughly, spin dry and tear into small pieces. Wash the basil as well, pat dry and remove the leaves from the stems. Halve the melon, remove the seeds and use a melon baller to form small balls, while catching the juice.
- 2. Sort the raspberries and rinse only if necessary. Halve the onion, peel and dice finely. Wash the lemon, grate 1 tsp of zest from it, halve it and squeeze out the juice. Cut the Brie into small cubes.
- 3. In a bowl, mix the lemon and melon juice, broth and olive oil well and season with salt and pepper. Toss the summer salad with the melon and the lemon vinaigrette and serve together with the Brie and fresh raspberries. Enjoy your meal!
