  1. 1. Place the beetroot in a sieve and let it drain well.
  2. 2. Season the beetroot in a bowl with honey, salt, and pepper to taste.
  3. 3. Wash the radishes thoroughly and trim off the ends.
  4. 4. Cut the radishes into small batons.
  5. 5. Wash the chives and shake them dry.
  6. 6. Slice the chives into fine rings.
  7. 7. Rinse the matjes (sweet and sour herring) under cold water.
  8. 8. Pat the matjes dry with a kitchen towel.
  9. 9. Cut the matjes into narrow strips.
  10. 10. Mix the remoulade (spicy mayonnaise sauce) with the crème fraîche in a bowl.
  11. 11. Spread the remoulade cream evenly over the bread slices.
  12. 12. Top the bread slices as desired with the beetroot, radishes, and matjes.
  13. 13. Garnish the smørrebrød with fried onions and chives.
  14. 14. Plate the rolls and enjoy.
