  1. 1. Fill a pot with water and add some salt.
  2. 2. Place the potatoes in the salted water so they are completely covered.
  3. 3. Bring the water to a boil.
  4. 4. Reduce the heat to a medium setting.
  5. 5. Cover the pot with a lid.
  6. 6. Let the potatoes cook for about 20 minutes.
  7. 7. Drain the cooking water.
  8. 8. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  9. 9. Wash the rosemary sprigs under running water.
  10. 10. Press the garlic cloves flat using the blunt side of a knife.
  11. 11. Line a baking tray with baking paper.
  12. 12. Spread the boiled potatoes on the tray.
  13. 13. Press each potato flat using the bottom of a glass.
  14. 14. Place the rosemary and the flattened garlic with the potatoes.
  15. 15. Drizzle everything with olive oil.
  16. 16. Add some honey.
  17. 17. Place the tray in the preheated oven.
  18. 18. Bake the potatoes for about 15 minutes.
  19. 19. Remove the tray from the oven.
  20. 20. Season the potatoes lightly with salt to taste.
  21. 21. Serve the crispy potatoes immediately.
