  1. 1. Halve the onion and remove the skin.
  2. 2. Dice the peeled onion into small cubes.
  3. 3. Thoroughly wash the green beans under running water.
  4. 4. Trim the hard ends off the green beans.
  5. 5. Peel the potatoes and wash them.
  6. 6. Cut the potatoes into rough cubes.
  7. 7. Place the potato cubes in a pot with salted water.
  8. 8. Bring the water with the potatoes to a boil.
  9. 9. Cook the potatoes over medium heat for about 20 to 25 minutes.
  10. 10. Bring salted water to a boil in a second pot.
  11. 11. Add the green beans to the boiling water.
  12. 12. Cook the beans for about 10 minutes.
  13. 13. Shock the beans immediately in ice water to stop the cooking process.
  14. 14. Rinse the skrei fillets under cold water.
  15. 15. Gently pat the fillets dry with paper towels.
  16. 16. Divide the skrei fillets into about 4 equal pieces.
  17. 17. Heat a pan over medium heat.
  18. 18. Add 1 tablespoon of oil to the hot pan.
  19. 19. Add the diced onion to the pan.
  20. 20. Sauté the onions for about 2 minutes until translucent.
  21. 21. Add the bacon to the onion in the pan.
  22. 22. Fry the bacon for another 2 minutes.
  23. 23. Remove the onions and bacon from the pan and set them aside.
  24. 24. Do not clean the pan, but leave the cooking juices inside.
  25. 25. Add 1 tablespoon of butter to the still hot pan.
  26. 26. Place the skrei fillets skin-side down in the pan.
  27. 27. Sear the fillets for about 3 minutes.
  28. 28. Regularly pour melted butter over the fillets while frying.
  29. 29. Drain the cooked potatoes using the lid.
  30. 30. Let the potatoes steam out briefly in the pot.
  31. 31. Add milk and 1 tablespoon of butter to the potatoes.
  32. 32. Mash the potatoes into a puree using a hand mixer or potato masher.
  33. 33. Season the puree with grated nutmeg and salt.
  34. 34. Remove the cooked skrei fillets from the pan.
  35. 35. Let the fillets drain on a plate lined with paper towels.
  36. 36. Portion the mashed potatoes onto the plates.
  37. 37. Place the skrei fillets and green beans on the plates.
  38. 38. Garnish the dish with the fried bacon and onions.
  39. 39. Serve the food immediately and enjoy your meal.
