🍽️ Skrei with Bacon, Mashed Potatoes and Green Beans

Ingredients
- onions, yellow 1 pc.
- broad beans 400 g
- potatoes, mostly waxy 1 kg
- salt pinch
- skrei cod - back fillet 800 g
- oil 1 tbsp
- belly bacon 100 g
- butter 2 tbsp
- milk 250 ml
- nutmeg, ground pinch
Instructions
- 1. Halve the onion and remove the skin.
- 2. Dice the peeled onion into small cubes.
- 3. Thoroughly wash the green beans under running water.
- 4. Trim the hard ends off the green beans.
- 5. Peel the potatoes and wash them.
- 6. Cut the potatoes into rough cubes.
- 7. Place the potato cubes in a pot with salted water.
- 8. Bring the water with the potatoes to a boil.
- 9. Cook the potatoes over medium heat for about 20 to 25 minutes.
- 10. Bring salted water to a boil in a second pot.
- 11. Add the green beans to the boiling water.
- 12. Cook the beans for about 10 minutes.
- 13. Shock the beans immediately in ice water to stop the cooking process.
- 14. Rinse the skrei fillets under cold water.
- 15. Gently pat the fillets dry with paper towels.
- 16. Divide the skrei fillets into about 4 equal pieces.
- 17. Heat a pan over medium heat.
- 18. Add 1 tablespoon of oil to the hot pan.
- 19. Add the diced onion to the pan.
- 20. Sauté the onions for about 2 minutes until translucent.
- 21. Add the bacon to the onion in the pan.
- 22. Fry the bacon for another 2 minutes.
- 23. Remove the onions and bacon from the pan and set them aside.
- 24. Do not clean the pan, but leave the cooking juices inside.
- 25. Add 1 tablespoon of butter to the still hot pan.
- 26. Place the skrei fillets skin-side down in the pan.
- 27. Sear the fillets for about 3 minutes.
- 28. Regularly pour melted butter over the fillets while frying.
- 29. Drain the cooked potatoes using the lid.
- 30. Let the potatoes steam out briefly in the pot.
- 31. Add milk and 1 tablespoon of butter to the potatoes.
- 32. Mash the potatoes into a puree using a hand mixer or potato masher.
- 33. Season the puree with grated nutmeg and salt.
- 34. Remove the cooked skrei fillets from the pan.
- 35. Let the fillets drain on a plate lined with paper towels.
- 36. Portion the mashed potatoes onto the plates.
- 37. Place the skrei fillets and green beans on the plates.
- 38. Garnish the dish with the fried bacon and onions.
- 39. Serve the food immediately and enjoy your meal.
