  1. 1. Bring about 1 liter of water to a boil in a pot.
  2. 2. Toast the sesame seeds in a pan without fat over medium heat for about 3 minutes.
  3. 3. Remove the toasted sesame seeds from the pan and place them on a plate.
  4. 4. Increase the heat in the pan to high.
  5. 5. Rinse the chicken fillets under running water.
  6. 6. Pat the fillets completely dry with kitchen paper.
  7. 7. Season the fillets with salt.
  8. 8. Fry the chicken fillets in hot oil for about 2 minutes on both sides.
  9. 9. Reduce the heat and continue to fry the chicken for approx. 15 minutes.
  10. 10. Turn the chicken occasionally during the cooking time.
  11. 11. Pour the hot water from the pot over the glass noodles.
  12. 12. Salt the glass noodles in the water.
  13. 13. Let the glass noodles swell in the water.
  14. 14. Rinse the cucumber under running water.
  15. 15. Halve the cucumber lengthwise.
  16. 16. Scrape out the seeds of the cucumber with a spoon.
  17. 17. Slice the cucumber thinly on a diagonal.
  18. 18. Cut off the ends of the papaya by approx. 1 cm each.
  19. 19. Place the papaya upright.
  20. 20. Peel the skin off the papaya.
  21. 21. Halve the peeled papaya.
  22. 22. Remove the seeds from the papaya.
  23. 23. Cut the papaya into cubes.
  24. 24. Drain the swollen glass noodles.
  25. 25. Peel the ginger.
  26. 26. Finely chop the ginger.
  27. 27. Mix the chopped ginger with the papaya cucumber salad.
  28. 28. Mix the glass noodles into the salad.
  29. 29. Add soy sauce to the salad.
  30. 30. Season the salad with salt, pepper, and vinegar.
  31. 31. Taste the salad and adjust the seasoning if necessary.
  32. 32. Season the finished chicken with pepper.
  33. 33. Roll the chicken in the toasted sesame seeds.
  34. 34. Slice the chicken.
  35. 35. Plate the sesame chicken.
  36. 36. Serve the chicken together with the papaya cucumber salad and the glass noodles.
