🍽️ Sesame Hummus with Roasted Broccoli and Carrots

Ingredients
- Broccoli 2 pcs.
- Carrots 4 pcs.
- Organic Limes 1 pcs.
- Olive oil 6 tbsp.
- Beet syrup 1 tsp.
- Salt pinch
- Pepper, black ground pinch
- Chickpeas 400 g
- Garlic cloves 1 pcs.
- Sesame, white 2 tbsp.
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Wash the broccoli thoroughly and shake it dry.
- 3. Break the broccoli into small florets.
- 4. Leave about 2 centimeters of the stem attached to each floret.
- 5. Wash the carrots as well.
- 6. Peel the carrots.
- 7. Halve the carrots lengthwise.
- 8. Quarter the carrot halves lengthwise as well.
- 9. Wash the lime.
- 10. Halve the lime.
- 11. Squeeze the juice out of the lime.
- 12. Line a baking tray with baking paper.
- 13. Spread the broccoli on the tray.
- 14. Spread the carrots on the tray.
- 15. Add 2 tablespoons of olive oil to the vegetables.
- 16. Add some beet syrup.
- 17. Season with salt.
- 18. Season with pepper.
- 19. Mix everything well.
- 20. Roast the vegetables in the oven.
- 21. Let the vegetables roast for about 25 minutes.
- 22. Pour the chickpeas into a sieve.
- 23. Rinse the chickpeas with water.
- 24. Let the chickpeas drain well.
- 25. Peel the garlic.
- 26. Slice the garlic into thin slices.
- 27. Take a frying pan.
- 28. Add the sesame seeds to the pan.
- 29. Do not add any fat.
- 30. Place the pan on medium heat.
- 31. Roast the sesame seeds.
- 32. Let the sesame seeds roast for about 3 minutes.
- 33. Wait until the sesame seeds are golden brown.
- 34. Remove the pan from the heat.
- 35. Add 4 tablespoons of olive oil to the sesame in the pan.
- 36. Add the garlic slices to the sesame.
- 37. Mix everything well.
- 38. Let the mixture infuse without heat.
- 39. Let the mixture infuse for about 1 to 2 minutes.
- 40. Take a tall container.
- 41. Add the chickpeas to the container.
- 42. Add the sesame-oil mixture to the chickpeas.
- 43. Add 6 tablespoons of cold water.
- 44. Blend the mixture until smooth.
- 45. Add the lime juice to the hummus.
- 46. Season the hummus with salt.
- 47. Season the hummus with pepper.
- 48. Take the roasted broccoli out of the oven.
- 49. Take the roasted carrots out of the oven.
- 50. Plate the broccoli and carrots.
- 51. Add the sesame hummus.
- 52. Serve the dish.
