  2. 2. Whisk vinegar and olive oil together in a bowl.
  3. 3. Season the dressing with salt, pepper, and sugar.
  4. 4. Cut the melon in half.
  5. 5. Remove the seeds using a spoon.
  6. 6. Cut the melon halves into eight long wedges.
  7. 7. Wash the chives.
  8. 8. Shake the chives dry.
  9. 9. Cut the chives into very fine rings.
  10. 10. Arrange the melon wedges and the Serrano ham on the plates.
  11. 11. Drizzle the dish with the dressing.
  12. 12. Garnish with the chive rings and serve.
