🍽️ Creamy Celery Coconut Soup with Crispy Bacon

Ingredients
- parsley, fresh 1 bunch
- onions, yellow 100 g
- garlic cloves 1 pc.
- ginger, fresh 5 g
- rapeseed oil 5 tbsp
- celeriac 600 g
- celery stalks 240 g
- vegetable broth 800 ml
- organic limes 1 pc.
- coconut milk 250 ml
- cumin 0.5 tsp
- salt 1 tsp
- pepper, black ground 0.5 tsp
- bacon strips 150 g
Instructions
- 1. Wash the parsley thoroughly and shake it dry.
- 2. Pluck the parsley leaves from the stems and place them in the mixing container.
- 3. Insert the measuring cup and chop the parsley for 8 seconds on speed 6.
- 4. Transfer the chopped parsley to a bowl and rinse the mixing container.
- 5. Peel the onions and cut them into quarters.
- 6. Peel the garlic and the ginger.
- 7. Place the onions, garlic, and ginger into the clean mixing container.
- 8. Chop the ingredients for 5 seconds on speed 5.
- 9. Use a spatula to push any sticky pieces down from the sides.
- 10. Add rapeseed oil and sauté the mixture for 5 minutes at 120 degrees without the measuring cup.
- 11. Peel the celeriac and wash it.
- 12. Cut the celeriac into cubes of about 3 cm.
- 13. Clean the celery stalks and wash them.
- 14. Cut the celery stalks into pieces of about 3 cm in length.
- 15. Add both types of celery to the mixing container.
- 16. Fry the celery for 5 minutes at 120 degrees without the measuring cup.
- 17. Pour in warm vegetable broth.
- 18. Insert the measuring cup and cook the soup for 15 minutes on speed 1 at 100 degrees.
- 19. Wash the lime and cut it in half.
- 20. Squeeze the juice from the lime.
- 21. Blend the soup for 30 seconds on speed 5.
- 22. Add the coconut milk, lime juice, cumin, 1 teaspoon of salt, and ½ teaspoon of pepper.
- 23. Blend the mixture for 25 seconds, starting on speed 6 and increasing to speed 8.
- 24. Optionally blend for another 1 minute on speed 8 to make the soup even creamier.
- 25. Fry the bacon cubes in a pan until crispy.
- 26. Heat the soup for 1 minute on speed 2 at 100 degrees.
- 27. Finally, season the soup to taste with salt and pepper.
- 28. Stir the soup for 15 seconds on speed 2.
- 29. Serve the soup topped with the crispy bacon cubes and chopped parsley.
