  1. 1. Remove the tough outer skin from the celery.
  2. 2. Slice the celery into rounds about 8 millimeters thick.
  3. 3. Rinse the thyme sprigs under running water.
  4. 4. Shake the thyme sprigs dry.
  5. 5. Heat 2 tablespoons of oil in a frying pan over medium heat.
  6. 6. Fry the celery slices in batches for about 3 minutes on each side until well browned.
  7. 7. Season the celery slices with salt and pepper.
  8. 8. Remove the celery slices from the pan and set them aside.
  9. 9. Cut the smoked tofu in half.
  10. 10. Slice the tofu halves lengthwise.
  11. 11. Place one slice of smoked tofu on top of one slice of celery.
  12. 12. Trim off the excess celery around the tofu.
  13. 13. Set the trimmed celery pieces aside.
  14. 14. Clean the leeks and wash them.
  15. 15. Make a lengthwise cut through each leek stalk.
  16. 16. Carefully peel off the three outermost leaf layers from each stalk.
  17. 17. Slice the remaining leek into thin rings.
  18. 18. Bring about 1 liter of salted water to a boil in a large pot.
  19. 19. Add the leek leaves to the boiling water for about 2 minutes.
  20. 20. Carefully remove the leek leaves from the water.
  21. 21. Shock the leek leaves immediately with cold water.
  22. 22. Pat the leek leaves dry with kitchen paper.
  23. 23. Lay the leek leaves on a cutting board.
  24. 24. Cut the leek leaves into pieces about 15 centimeters long.
  25. 25. Season the leek leaves with salt and pepper.
  26. 26. Place the celery-tofu combination on the bottom end of a leek leaf.
  27. 27. Add a thyme sprig.
  28. 28. Fold the side edges of the leek leaf over the filling.
  29. 29. Roll the leaf from bottom to top.
  30. 30. Secure the parcel with toothpicks if necessary.
  31. 31. Repeat the process until all ingredients are used up.
  32. 32. Heat 2 tablespoons of oil in another frying pan over medium heat.
  33. 33. Fry the parcels one by one for about 2 minutes on each side.
  34. 34. Remove the parcels from the pan and set them aside briefly.
  35. 35. Fry the remaining celery and leek rings in the hot pan.
  36. 36. Add sugar.
  37. 37. Season the vegetables with salt and pepper.
  38. 38. Plate the parcels with the fried vegetables.
  39. 39. Garnish the dish with thyme sprigs.
  40. 40. Serve the dish.
