  3. 3. Heat the oil in a pot over medium heat.
  4. 4. Sauté the onions for about 3 minutes until they are translucent.
  5. 5. Add the celery cubes to the pot.
  6. 6. Deglaze the mixture with the vegetable broth.
  7. 7. Let the soup simmer for about 25 minutes.
  8. 8. Remove the pot from the heat.
  9. 9. Puree the contents with an immersion blender until creamy.
  10. 10. Stir the heavy cream into the soup.
  11. 11. Season the soup with salt and pepper to taste.
  12. 12. Wash the parsley and shake it dry.
  13. 13. Roughly pluck the parsley leaves.
  14. 14. Garnish the finished soup with the fresh parsley.
