  1. 1. Peel the celery stalks and cut the vegetable into small cubes.
  2. 2. Halve the onion, remove the skin, and chop it finely.
  3. 3. Wash the apples, remove the stem and core, and cut them into approx. 1 cm cubes.
  4. 4. Wash the thyme sprigs, shake them dry, and strip the leaves from the stems.
  5. 5. Finely chop the thyme leaves.
  6. 6. Heat 2 tablespoons of oil in a pot over medium heat.
  7. 7. Sauté the onions in it for approx. 3 minutes until translucent.
  8. 8. Add the celery, apple cubes, and thyme to the pot.
  9. 9. Deglaze the mixture with vegetable broth.
  10. 10. Let the soup simmer for approx. 25 minutes.
  11. 11. Cut the smoked tofu into small cubes.
  12. 12. Wash the parsley and shake it dry.
  13. 13. Pluck the parsley leaves from the stems.
  14. 14. Heat 2 tablespoons of oil in a frying pan over medium heat.
  15. 15. Fry the smoked tofu in it for approx. 3 minutes until crispy.
  16. 16. Remove the pot with the soup from the stove.
  17. 17. Puree the soup with an immersion blender until smooth and creamy.
  18. 18. Stir the oat drink into the soup.
  19. 19. Season the soup with salt and pepper to taste.
  20. 20. Serve the soup garnished with the crispy smoked tofu and fresh parsley.
