🍲 Creamy Celery Apple Soup with Thyme and Crispy Smoked Tofu

Ingredients
- celeriac 1 pc.
- onions, yellow 1 pc.
- apples, red 2 pc.
- thyme, fresh 10 g
- oil 4 tbsp
- vegetable broth 700 ml
- smoked tofu 100 g
- parsley, fresh 10 g
- oat drink 300 ml
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Peel the celery stalks and cut the vegetable into small cubes.
- 2. Halve the onion, remove the skin, and chop it finely.
- 3. Wash the apples, remove the stem and core, and cut them into approx. 1 cm cubes.
- 4. Wash the thyme sprigs, shake them dry, and strip the leaves from the stems.
- 5. Finely chop the thyme leaves.
- 6. Heat 2 tablespoons of oil in a pot over medium heat.
- 7. Sauté the onions in it for approx. 3 minutes until translucent.
- 8. Add the celery, apple cubes, and thyme to the pot.
- 9. Deglaze the mixture with vegetable broth.
- 10. Let the soup simmer for approx. 25 minutes.
- 11. Cut the smoked tofu into small cubes.
- 12. Wash the parsley and shake it dry.
- 13. Pluck the parsley leaves from the stems.
- 14. Heat 2 tablespoons of oil in a frying pan over medium heat.
- 15. Fry the smoked tofu in it for approx. 3 minutes until crispy.
- 16. Remove the pot with the soup from the stove.
- 17. Puree the soup with an immersion blender until smooth and creamy.
- 18. Stir the oat drink into the soup.
- 19. Season the soup with salt and pepper to taste.
- 20. Serve the soup garnished with the crispy smoked tofu and fresh parsley.
