🍽️ Crispy Celery-Apple Tartare with Smoked Tofu

Ingredients
- Celery root 0.25 pc.
- Apples, red 2 pc.
- Smoked tofu 175 g
- Dill, fresh 25 g
- Chives, fresh 15 g
- Lemons 1 pc.
- Olive oil 2 tbsp
- Salt pinch
- Pepper, mixed-color pinch
- Soy yogurt 5 tbsp
- Horseradish 3 tbsp
Instructions
- 1. Peel the celery stalks and wash them thoroughly.
- 2. Cut the celery into very small cubes.
- 3. Wash the apples and remove the core.
- 4. Cut the apples into fine cubes as well.
- 5. Cut the smoked tofu into small cubes.
- 6. Wash the dill and shake it dry.
- 7. Set aside four small dill sprigs to use as decoration later.
- 8. Finely chop the remaining dill.
- 9. Wash the chives and shake them dry.
- 10. Cut the chives into fine rings.
- 11. Wash the lemon.
- 12. Grate about one teaspoon of lemon zest finely.
- 13. Squeeze the juice of the lemon.
- 14. Place the diced celery, apples, tofu, chopped dill, and chives into a bowl.
- 15. Add one tablespoon of lemon juice and some olive oil.
- 16. Mix all ingredients well together.
- 17. Season the mixture with salt and pepper to taste.
- 18. Take a second bowl.
- 19. Mix the soy yogurt with the horseradish and the lemon zest there.
- 20. Season the cream with salt and pepper as well.
- 21. Fill the celery-apple tartare into glasses.
- 22. Add the horseradish cream on top.
- 23. Decorate the dish with the reserved dill sprigs.
- 24. Serve the tartare best chilled from the refrigerator.
