  1. 1. Peel the celery stalks and wash them thoroughly.
  2. 2. Cut the celery into very small cubes.
  3. 3. Wash the apples and remove the core.
  4. 4. Cut the apples into fine cubes as well.
  5. 5. Cut the smoked tofu into small cubes.
  6. 6. Wash the dill and shake it dry.
  7. 7. Set aside four small dill sprigs to use as decoration later.
  8. 8. Finely chop the remaining dill.
  9. 9. Wash the chives and shake them dry.
  10. 10. Cut the chives into fine rings.
  11. 11. Wash the lemon.
  12. 12. Grate about one teaspoon of lemon zest finely.
  13. 13. Squeeze the juice of the lemon.
  14. 14. Place the diced celery, apples, tofu, chopped dill, and chives into a bowl.
  15. 15. Add one tablespoon of lemon juice and some olive oil.
  16. 16. Mix all ingredients well together.
  17. 17. Season the mixture with salt and pepper to taste.
  18. 18. Take a second bowl.
  19. 19. Mix the soy yogurt with the horseradish and the lemon zest there.
  20. 20. Season the cream with salt and pepper as well.
  21. 21. Fill the celery-apple tartare into glasses.
  22. 22. Add the horseradish cream on top.
  23. 23. Decorate the dish with the reserved dill sprigs.
  24. 24. Serve the tartare best chilled from the refrigerator.
