  2. 2. Peel the celeriac and cut it into small cubes.
  3. 3. Remove the tough parts from the celery stalks and save the green leaves for later.
  4. 4. Cut the celery stalks in half crosswise.
  5. 5. Shave the celery stalks into thin slices using a vegetable peeler.
  6. 6. Lightly salt the celery slices.
  7. 7. Peel the onions and cut them into coarse cubes.
  8. 8. Wash the apples and cut them into quarters.
  9. 9. Remove the cores from the apple quarters.
  10. 10. Cut the cored apple quarters into coarse cubes.
  11. 11. Melt 3 tablespoons of butter in a large pot.
  12. 12. Add the celeriac cubes, onions, and apples to the pot.
  13. 13. Sauté the vegetables and fruits over medium heat.
  14. 14. Deglaze the mixture with white wine.
  15. 15. Add the broth to the soup.
  16. 16. Let the soup simmer covered over low heat for about 20 minutes.
  17. 17. Cut the rustic bread into small cubes.
  18. 18. Melt the remaining 2 tablespoons of butter in a large frying pan.
  19. 19. Fry the bread cubes in the butter until golden brown.

  30. 30. Distribute the pieces of smoked ham over the soup.
  31. 31. Garnish with the celery slices and celery greens.
  32. 32. Sprinkle the chive rings on top.
