🍲 Creamy Celery Apple Soup with Croutons and Smoked Ham

Ingredients
- celery root 500 g
- celery stalks 200 g
- salt pinch
- onions, yellow 2 pcs
- apples, green 2 pcs
- butter 5 tbsp
- dry white wine 200 ml
- vegetable broth 700 ml
- rustic bread 2 slices
- smoked tilapia 130 g
- heavy cream 200 ml
- pepper, black ground pinch
- chives, fresh 0.5 bunch
Instructions
- 1. Wash the celeriac and the celery stalks thoroughly.
- 2. Peel the celeriac and cut it into small cubes.
- 3. Remove the tough parts from the celery stalks and save the green leaves for later.
- 4. Cut the celery stalks in half crosswise.
- 5. Shave the celery stalks into thin slices using a vegetable peeler.
- 6. Lightly salt the celery slices.
- 7. Peel the onions and cut them into coarse cubes.
- 8. Wash the apples and cut them into quarters.
- 9. Remove the cores from the apple quarters.
- 10. Cut the cored apple quarters into coarse cubes.
- 11. Melt 3 tablespoons of butter in a large pot.
- 12. Add the celeriac cubes, onions, and apples to the pot.
- 13. Sauté the vegetables and fruits over medium heat.
- 14. Deglaze the mixture with white wine.
- 15. Add the broth to the soup.
- 16. Let the soup simmer covered over low heat for about 20 minutes.
- 17. Cut the rustic bread into small cubes.
- 18. Melt the remaining 2 tablespoons of butter in a large frying pan.
- 19. Fry the bread cubes in the butter until golden brown.
- 20. Remove the toasted bread cubes from the pan and set them aside.
- 21. Tear the smoked ham into small pieces.
- 22. Heat the cream in the finished soup.
- 23. Puree the soup finely with a hand blender.
- 24. Season the soup with salt and pepper to taste.
- 25. Wash the chives and pat them dry.
- 26. Cut the chives into fine rings.
- 27. Roughly chop the reserved celery greens.
- 28. Serve the soup in bowls.
- 29. Top the soup with the croutons.
- 30. Distribute the pieces of smoked ham over the soup.
- 31. Garnish with the celery slices and celery greens.
- 32. Sprinkle the chive rings on top.
