🍽️ Homemade Wild Garlic Pesto

Ingredients
- pine nuts 30 g
- Parmesan 50 g
- wild garlic 100 g
- oil 100 ml
- salt pinch
- pepper, black ground pinch
- olive oil 50 ml
Instructions
- 1. Heat a non-stick pan over medium heat without adding any oil.
- 2. Add the pine nuts to the hot pan.
- 3. Roast the nuts for about two minutes until they turn golden brown.
- 4. Remove the roasted pine nuts from the pan and set them aside.
- 5. Grate the Parmesan cheese finely.
- 6. Thoroughly wash the wild garlic under running water.
- 7. Shake the wild garlic dry to remove excess water.
- 8. Tear the wild garlic leaves into coarse pieces.
- 9. Place the cooled pine nuts, wild garlic, and Parmesan into a tall container.
- 10. Add the oil.
- 11. Blend the ingredients with a hand blender until a creamy mixture forms.
- 12. Season the pesto to taste with salt and pepper.
- 13. Stir in a little extra olive oil if desired.
- 14. Transfer the finished pesto into a jar or use it immediately.
