  1. 1. Heat a non-stick pan over medium heat without adding any oil.
  2. 2. Add the pine nuts to the hot pan.
  3. 3. Roast the nuts for about two minutes until they turn golden brown.
  4. 4. Remove the roasted pine nuts from the pan and set them aside.
  5. 5. Grate the Parmesan cheese finely.
  6. 6. Thoroughly wash the wild garlic under running water.
  7. 7. Shake the wild garlic dry to remove excess water.
  8. 8. Tear the wild garlic leaves into coarse pieces.
  9. 9. Place the cooled pine nuts, wild garlic, and Parmesan into a tall container.
  10. 10. Add the oil.
  11. 11. Blend the ingredients with a hand blender until a creamy mixture forms.
  12. 12. Season the pesto to taste with salt and pepper.
  13. 13. Stir in a little extra olive oil if desired.
  14. 14. Transfer the finished pesto into a jar or use it immediately.
