🍽️ Homemade Hot Dog Buns with Toppings

Ingredients
- Soft Rolls Mix 500 g
- Yeast, fresh 21 g
- Water 230 g
- Sunflower oil 45 g
- Salt pinch
- Gherkins 400 g
- Shallots 1 pc.
- Stalk celery 50 g
- Cornstarch 1 tsp
- Pepper, black ground pinch
- Onions, yellow 3 pcs.
- Wheat flour, Type 405 8 tbsp
- Ghee 6 tbsp
- Curly Fries 750 g
- Vienna sausages 8 pcs.
- Ketchup 100 g
- Mustard 50 g
Instructions
- 1. Pour the bread mix into a large mixing bowl or onto a baking mat.
- 2. Make a well in the center and crumble the yeast into it.
- 3. Add 225 g of water and stir it into the yeast first.
- 4. Slowly mix the yeast water into the rest of the bread mix.
- 5. Add sunflower oil and 0.25 teaspoons of salt.
- 6. Knead everything for about 10 minutes until you have a smooth dough, using a food processor or by hand.
- 7. Shape the dough into a ball.
- 8. Let the dough rise, covered, for about 30 minutes.
- 9. Dice the gherkins, the peeled shallot, and the celery stalks into fine cubes.
- 10. Fry the vegetables for about 5 minutes over high heat in a pan.
- 11. Mix the starch with a little water.
- 12. Add the starch-water mixture, 200 g of gherkin juice, salt, and pepper to the pan.
- 13. Bring the mixture to a boil.
- 14. Simmer over low heat for about 10 minutes.
- 15. Place the finished dough onto a baking mat.
- 16. Divide the dough into 8 equal portions.
- 17. Shape each portion into a ball.
- 18. Flatten each ball into an oval shape.
- 19. Roll the ovals into hot dog buns.
- 20. Place the buns seam-side down on a baking sheet lined with baking paper.
- 21. Let the buns rest, covered, for about 30 minutes.
- 22. Peel the onions and slice or shred them into thin rings.
- 23. Toss the onion rings with the flour.
- 24. Heat the ghee in a pan or casserole dish over medium heat.
- 25. Fry the onions for 5 to 10 minutes until golden brown.
- 26. Remove the onions from the pan.
- 27. Let them drain slightly on a kitchen towel.
- 28. Season the fried onions with salt and pepper.
- 29. Preheat the oven to 200 °C conventional heat.
- 30. Bake the buns in the preheated oven for about 15 minutes.
- 31. Let the baked buns cool down afterwards.
- 32. Prepare the curly fries according to the package instructions.
- 33. Warm the sausages in a pot with hot, but not boiling, water.
- 34. Slice the cooled buns lengthwise.
- 35. Brush the inside of the buns with the remaining fat from the fried onions.
- 36. Place one Vienna sausage into each bun.
- 37. Serve the hot dogs with the gherkin relish, fried onions, curly fries, ketchup, and mustard.
