  1. 1. Pour the bread mix into a large mixing bowl or onto a baking mat.
  2. 2. Make a well in the center and crumble the yeast into it.
  3. 3. Add 225 g of water and stir it into the yeast first.
  4. 4. Slowly mix the yeast water into the rest of the bread mix.
  5. 5. Add sunflower oil and 0.25 teaspoons of salt.
  6. 6. Knead everything for about 10 minutes until you have a smooth dough, using a food processor or by hand.
  7. 7. Shape the dough into a ball.
  8. 8. Let the dough rise, covered, for about 30 minutes.
  9. 9. Dice the gherkins, the peeled shallot, and the celery stalks into fine cubes.
  10. 10. Fry the vegetables for about 5 minutes over high heat in a pan.
  11. 11. Mix the starch with a little water.
  12. 12. Add the starch-water mixture, 200 g of gherkin juice, salt, and pepper to the pan.
  13. 13. Bring the mixture to a boil.
  14. 14. Simmer over low heat for about 10 minutes.
  15. 15. Place the finished dough onto a baking mat.
  16. 16. Divide the dough into 8 equal portions.
  17. 17. Shape each portion into a ball.
  18. 18. Flatten each ball into an oval shape.
  19. 19. Roll the ovals into hot dog buns.
  20. 20. Place the buns seam-side down on a baking sheet lined with baking paper.
  21. 21. Let the buns rest, covered, for about 30 minutes.
  22. 22. Peel the onions and slice or shred them into thin rings.
  23. 23. Toss the onion rings with the flour.
  24. 24. Heat the ghee in a pan or casserole dish over medium heat.
  25. 25. Fry the onions for 5 to 10 minutes until golden brown.
  26. 26. Remove the onions from the pan.
  27. 27. Let them drain slightly on a kitchen towel.
  28. 28. Season the fried onions with salt and pepper.
  29. 29. Preheat the oven to 200 °C conventional heat.
  30. 30. Bake the buns in the preheated oven for about 15 minutes.
  31. 31. Let the baked buns cool down afterwards.
  32. 32. Prepare the curly fries according to the package instructions.
  33. 33. Warm the sausages in a pot with hot, but not boiling, water.
  34. 34. Slice the cooled buns lengthwise.
  35. 35. Brush the inside of the buns with the remaining fat from the fried onions.
  36. 36. Place one Vienna sausage into each bun.
  37. 37. Serve the hot dogs with the gherkin relish, fried onions, curly fries, ketchup, and mustard.
