  1. 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into a small bowl.
  3. 3. Add 1 tablespoon of sugar to the yeast and dissolve both in the lukewarm milk.
  4. 4. Cover the bowl and let the mixture rest for approx. 15 minutes.
  5. 5. Mix sugar, flour, salt, and the cubed butter in a large bowl.
  6. 6. Add the yeast milk and the egg to the flour mixture.
  7. 7. Knead everything into a smooth dough.
  8. 8. Cover the bowl with a clean kitchen towel.
  9. 9. Let the dough rise in a warm place for approx. 1 hour until it has doubled in size.
  10. 10. Lightly dust a work surface with flour.
  11. 11. Roll out the dough to approx. 1.5 cm thickness.
  12. 12. Cut out circles with approx. 8 cm diameter using a cutter.
  13. 13. Cut out a smaller circle in the center of each circle.
  14. 14. Heat frying oil in a pot.
  15. 15. Test the oil temperature by holding a wooden spoon handle in it; bubbles should form.
  16. 16. Fry the donuts in batches for approx. 2–3 minutes on both sides until golden brown.
  17. 17. Let the donuts drain on kitchen paper.
  18. 18. Let the donuts cool down completely.
  19. 19. Bring approx. 1 liter of water to a boil in a pot.
  20. 20. Chop the chocolate finely.
  21. 21. Melt the chocolate in a metal bowl over the hot water bath.
  22. 22. Dip the donuts halfway into the melted chocolate.
  23. 23. Let the excess chocolate drain well.
  24. 24. Decorate the donuts with sugar pearls.
  25. 25. Set the donuts aside to let the chocolate dry.
