🍰 Homemade Brioche Rolls

Ingredients
- Milk 160 ml
- Yeast, fresh 0.5 pcs
- Sugar 40 g
- butter 125 g
- Salt Pinch
- Eggs 3 pcs
- Wheat flour, Type 405 450 g
Instructions
- 1. Warm 150 milliliters of milk in a pot until it is lukewarm.
- 2. Crumble the yeast into the lukewarm milk with your hands.
- 3. Add 1 tablespoon of sugar and stir until the sugar has completely dissolved.
- 4. Let the yeast milk rise in the pot in a warm place for about 10 minutes.
- 5. Pour the yeast milk into a bowl.
- 6. Add the remaining sugar, butter, salt, 2 eggs, and the flour.
- 7. Knead everything into a smooth dough.
- 8. Let the dough rise again for about 1 hour.
- 9. Preheat the oven to 200 degrees Celsius convection.
- 10. Grease a muffin tin.
- 11. Divide the dough on a floured work surface into 14 equal portions.
- 12. Shape 12 of these portions into balls.
- 13. Place the large balls into the indentations of the muffin tin.
- 14. Divide the remaining 2 portions of dough into 6 small balls each.
- 15. Place the small balls on top of the large balls in the tin.
- 16. Let the rolls rise covered for another 10 minutes.
- 17. Separate an egg and take only the egg yolk.
- 18. Whisk the egg yolk with 1 tablespoon of milk in a small bowl.
- 19. Brush the rolls with the egg yolk and milk mixture.
- 20. Bake the rolls in the oven for about 15 to 18 minutes.
- 21. Remove the rolls from the oven and let them cool.
- 22. Serve the rolls fresh.
