Ingredients
- flour, Type 550 1000 g
- water 600 g
- vegetable broth 1 L
- soy sauce 2 tbsp
- salt 1 tsp
Instructions
- 1. Put wheat flour and water into a bowl.
- 2. Knead the dough vigorously for about 10 minutes.
- 3. Cover the dough with water.
- 4. Let the dough rest for at least 1 hour.
- 5. Take the dough out of the water.
- 6. Knead the dough in a fresh bowl with water.
- 7. Wash the starch out of the dough by changing the water.
- 8. Change the water about 3 to 4 times.
- 9. Continue kneading until the water is clear.
- 10. Remove the brownish gluten dough from the water.
- 11. Let the gluten dough drain and rest for about 30 minutes.
- 12. Put vegetable broth, soy sauce, and 1 teaspoon of salt into a pot.
- 13. Bring the broth to a boil.
- 14. Knead the gluten dough vigorously for about 10 minutes.
- 15. Make sure the dough is pliable.
- 16. Add spices as desired.
- 17. Shape the dough for your intended use.
- 18. Divide the dough into three strands and braid a loaf if you want a fibrous texture.
- 19. Form a ball if you want to make schnitzels, goulash, or medallions.
- 20. Put the gluten dough into the boiling broth.
- 21. Reduce the heat to a low setting.
- 22. Let the gluten simmer for about 25 to 30 minutes.
- 23. Check if the gluten is firm.
- 24. Make sure the liquid is no longer boiling.
- 25. Take the gluten out of the broth.
- 26. Let the gluten cool down.
- 27. Process the gluten as desired.
