  4. 4. Let the dough rest for at least 1 hour.
  5. 5. Take the dough out of the water.
  6. 6. Knead the dough in a fresh bowl with water.
  7. 7. Wash the starch out of the dough by changing the water.
  8. 8. Change the water about 3 to 4 times.
  9. 9. Continue kneading until the water is clear.
  10. 10. Remove the brownish gluten dough from the water.
  11. 11. Let the gluten dough drain and rest for about 30 minutes.
  12. 12. Put vegetable broth, soy sauce, and 1 teaspoon of salt into a pot.
  13. 13. Bring the broth to a boil.
  14. 14. Knead the gluten dough vigorously for about 10 minutes.
  15. 15. Make sure the dough is pliable.
  16. 16. Add spices as desired.
  17. 17. Shape the dough for your intended use.
  18. 18. Divide the dough into three strands and braid a loaf if you want a fibrous texture.
  19. 19. Form a ball if you want to make schnitzels, goulash, or medallions.
  20. 20. Put the gluten dough into the boiling broth.
  21. 21. Reduce the heat to a low setting.
  22. 22. Let the gluten simmer for about 25 to 30 minutes.
  23. 23. Check if the gluten is firm.
  24. 24. Make sure the liquid is no longer boiling.
