  1. 1. Take the butter out of the fridge and let it soften at room temperature.
  2. 2. Thoroughly wash the herbs under running water.
  3. 3. Shake the herbs dry to remove excess water.
  4. 4. Remove the coarse stems from the herbs.
  5. 5. Finely chop the herbs.
  6. 6. Peel the garlic.
  7. 7. Finely chop the garlic as well.
  8. 8. Place the softened butter into a small bowl.
  9. 9. Add the chopped herbs and garlic to the butter.
  10. 10. Season the mixture with salt and pepper.
  11. 11. Mix everything well until the herb butter is homogeneous.
  12. 12. Finally, taste the herb butter and adjust the seasoning if necessary.
  13. 13. Rinse the pork schnitzels under cold water.
  14. 14. Pat the schnitzels completely dry with a kitchen towel.
  15. 15. Season the dry schnitzels on both sides with salt and pepper.
  16. 16. Add oil to a large pan.
  17. 17. Heat the pan on high heat.
  18. 18. Place the schnitzels into the hot pan.
  19. 19. Fry the schnitzels for about 3 to 4 minutes on the first side until golden brown.
  20. 20. Turn the schnitzels and fry them for another 3 to 4 minutes on the other side.
  21. 21. Remove the cooked schnitzels from the pan.
  22. 22. Place a dollop of the herb butter on each schnitzel.
  23. 23. Plate the dish and serve it immediately.
