🍽️ Crispy Pork Schnitzels with Fresh Herb Butter

Ingredients
- butter 60 g
- Parsley, fresh 10 g
- Dill, fresh 10 g
- Chives, fresh 10 g
- Garlic cloves 1 pc
- Salt pinch
- Pepper, black ground pinch
- Pork schnitzel from the top round of pork 600 g
Instructions
- 1. Take the butter out of the fridge and let it soften at room temperature.
- 2. Thoroughly wash the herbs under running water.
- 3. Shake the herbs dry to remove excess water.
- 4. Remove the coarse stems from the herbs.
- 5. Finely chop the herbs.
- 6. Peel the garlic.
- 7. Finely chop the garlic as well.
- 8. Place the softened butter into a small bowl.
- 9. Add the chopped herbs and garlic to the butter.
- 10. Season the mixture with salt and pepper.
- 11. Mix everything well until the herb butter is homogeneous.
- 12. Finally, taste the herb butter and adjust the seasoning if necessary.
- 13. Rinse the pork schnitzels under cold water.
- 14. Pat the schnitzels completely dry with a kitchen towel.
- 15. Season the dry schnitzels on both sides with salt and pepper.
- 16. Add oil to a large pan.
- 17. Heat the pan on high heat.
- 18. Place the schnitzels into the hot pan.
- 19. Fry the schnitzels for about 3 to 4 minutes on the first side until golden brown.
- 20. Turn the schnitzels and fry them for another 3 to 4 minutes on the other side.
- 21. Remove the cooked schnitzels from the pan.
- 22. Place a dollop of the herb butter on each schnitzel.
- 23. Plate the dish and serve it immediately.
