🍽️ Honey-Mustard Schnitzel with Asparagus and Crispy Garlic Bread

Ingredients
- garlic cloves 1 pc.
- oil 7 tbsp
- sweet mustard 2 tsp
- honey 1 tsp
- vinegar 1 tsp
- salt pinch
- pepper, black ground pinch
- white asparagus 2 bunch
- mini romaine 1 pc.
- ham schnitzel from the top round of pork 600 g
- baguette 1 pc.
- onions, red 1 pc.
- sugar 1.5 tsp
- vegetable broth 50 ml
Instructions
- 1. Preheat the oven to 150 degrees Celsius with fan.
- 2. Crush the garlic cloves roughly with the palm of your hand.
- 3. Warm 4 tablespoons of oil in a pan over low heat.
- 4. Fry the garlic in the oil for about 2 minutes.
- 5. Remove the garlic from the pan and set it aside.
- 6. Mix sweet mustard, 1 tablespoon of oil, honey, vinegar, salt, and pepper in a bowl to make a marinade.
- 7. Wash the asparagus and peel it.
- 8. Cut off the woody ends of the asparagus.
- 9. Cut the asparagus in half.
- 10. Wash the salad greens and shake them dry.
- 11. Trim the hard core from the salad greens thinly.
- 12. Cut the salad into eighths.
- 13. Rinse the meat and pat it dry.
- 14. Gently flatten the meat with the palm of your hand.
- 15. Heat 1 tablespoon of oil in a pan over high heat.
- 16. Fry the meat for about 4 minutes until golden brown.
- 17. Place the fried meat into the marinade.
- 18. Turn the meat in the marinade so it is fully coated.
- 19. Wrap the meat in aluminum foil.
- 20. Place the wrapped meat into a baking dish.
- 21. Finish cooking the meat in the oven for about 10 minutes.
- 22. Do not clean the pan as it is still needed for the vegetables.
- 23. Slice the baguette.
- 24. Dip the cut sides of the bread into the garlic oil.
- 25. Place the bread oiled-side up on a baking sheet lined with baking paper.
- 26. Toast the bread in the oven for approx. 10 minutes until crispy.
- 27. Halve the onions and peel them.
- 28. Cut the onions into wedges.
- 29. Add 1 tablespoon of oil and 1 teaspoon of sugar to the still warm pan.
- 30. Heat the pan over medium heat.
- 31. Fry the onions for about 2 minutes.
- 32. Add the asparagus to the pan.
- 33. Cook the asparagus for another approx. 5 minutes.
- 34. Deglaze the vegetables with broth.
- 35. Add the salad to the pan.
- 36. Toss everything well to mix it.
- 37. Season the vegetables with salt, pepper, and sugar.
- 38. Remove the pan from the heat.
- 39. Take the meat and the baguette out of the oven.
- 40. Cut the meat into strips.
- 41. Plate the meat, asparagus vegetables, marinade, and baguette.
- 42. Serve the dish and enjoy your meal!
