  1. 1. Take the pork loin out of the fridge and let it reach room temperature.
  2. 2. Wash the meat thoroughly and then pat it dry with a kitchen towel.
  3. 3. Wash the thyme sprigs and shake off excess water.
  4. 4. Carefully pluck the thyme leaves off the stems.
  5. 5. Season the pork loin generously with salt and pepper.
  6. 6. Line a baking tray with baking paper.
  7. 7. Cover the baking paper completely with the slices of Serrano ham.
  8. 8. Wrap the pork loin tightly in the ham.
  9. 9. Secure the package with kitchen twine so it does not unravel.
  10. 10. Preheat the oven to 200 degrees Celsius with fan setting.
  11. 11. Heat a frying pan suitable for the oven with some oil on high heat.
  12. 12. Sear the pork loin for about two minutes on each side.
  13. 13. Add the fresh thyme leaves to the pan.
  14. 14. Place the pan in the oven and bake the meat for about 40 minutes.
  15. 15. Place the baguette in the oven when there are about eight minutes of baking time left.
  16. 16. Bring about 1.5 liters of salted water to a boil in a pot.
  17. 17. Add the beans to the boiling water and cook them for about five minutes until tender but firm.
  18. 18. Drain the beans in a colander.
  19. 19. Rinse the beans immediately with cold water to stop the cooking process.
  20. 20. Take the pork loin out of the oven.
  21. 21. Wrap the meat briefly in aluminum foil.
  22. 22. Let the meat rest for about ten minutes so the juices can distribute.
  23. 23. Toss the beans briefly in the pan juices.
  24. 24. Slice the pork loin.
  25. 25. Serve the meat, beans, and baguette together on the plate.
