🍽️ Crispy Pork Neck Steaks with Onion Crust and Creamy Potato-Apple Puree

Ingredients
- potatoes, floury 1 kg
- salt pinch
- apples, red 2 pcs
- leek 1 pc
- pork neck steaks 600 g
- roasted onions 100 g
- sweet mustard 1 tbsp
- butter 5 tbsp
- oil 3 tbsp
- pepper, black ground pinch
- sugar pinch
- cream cheese, plain 100 g
- milk 100 ml
Instructions
- 1. Preheat the oven to 180 degrees Celsius using top and bottom heat.
- 2. Wash the potatoes thoroughly.
- 3. Peel the potatoes.
- 4. Cut the potatoes into large cubes.
- 5. Fill a pot with salted water.
- 6. Add the potato cubes to the boiling salted water.
- 7. Cook the potatoes covered for about 20 minutes on medium heat.
- 8. Check if the potatoes are soft.
- 9. Peel the apples.
- 10. Remove the cores from the apples.
- 11. Cut the apples into large cubes.
- 12. Add the apple cubes to the pot about 10 minutes before the potatoes finish cooking.
- 13. Cut the leek lengthwise into two halves.
- 14. Remove the hard root end from the leek.
- 15. Slice the leek into thin strips.
- 16. Rinse the leek strips in a sieve.
- 17. Pat the pork neck steaks dry with kitchen paper.
- 18. Lightly pound the steaks flat.
- 19. Let the steaks rest at room temperature for a short time to temper.
- 20. Take a bowl.
- 21. Crumble the crispy onions roughly into the bowl.
- 22. Add salt to the crispy onion mixture.
- 23. Add sweet mustard to the crispy onion mixture.
- 24. Add 4 tablespoons of soft butter to the crispy onion mixture.
- 25. Mix the crispy onions with the spices and butter.
- 26. Heat 2 tablespoons of oil in a pan.
- 27. Set the heat to medium to high.
- 28. Sear the steaks on one side for about 2 minutes on high heat.
- 29. Sear the steaks on the other side for about 2 minutes on high heat.
- 30. Place the seared steaks on a baking sheet.
- 31. Season the steaks with salt.
- 32. Season the steaks with pepper.
- 33. Spread the crispy onion mixture evenly over the steaks.
- 34. Place the tray on the top rack in the oven.
- 35. Bake the steaks for about 5 minutes in the oven.
- 36. Leave the pan with the drippings uncleaned.
- 37. Add 1 tablespoon of oil to the hot pan.
- 38. Sauté the leek over medium to high heat.
- 39. Shake the pan occasionally while sautéing.
- 40. Sauté the leek for about 3 to 4 minutes.
- 41. Season the leek with salt.
- 42. Season the leek with pepper.
- 43. Season the leek with sugar.
- 44. Drain the cooking water from the apples and potatoes.
- 45. Return the apples and potatoes to the pot.
- 46. Add milk to the pot.
- 47. Add cream cheese to the pot.
- 48. Add 1 tablespoon of butter to the pot.
- 49. Mash the mixture with a potato masher.
- 50. Season the puree with salt.
- 51. Season the puree with pepper.
- 52. Remove the steaks from the oven.
- 53. Plate the steaks.
- 54. Add the leek to the plates.
- 55. Add the puree to the plates.
- 56. Serve the dish with sweet mustard.
