  2. 2. Wash the parsley and shake it dry.
  3. 3. Pluck the parsley leaves from the stems and chop them finely.
  4. 4. Crumble the toast bread into small pieces.
  5. 5. Halve the onions and peel them.
  6. 6. Cut the onions into wedges.
  7. 7. Rinse the pork fillet and pat it dry.
  8. 8. Cut the fillet into medallions about five centimeters thick.
  9. 9. Season the medallions with salt and pepper.
  10. 10. Heat a frying pan on high heat.
  11. 11. Fry the ham cubes without additional fat for about three minutes.
  12. 12. Place the fried ham into a bowl.
  13. 13. Add the chopped parsley and the bread crumbs.
  14. 14. Season the mixture with some pepper and mix everything well.
  15. 15. Warm the pan again on medium heat.
  16. 16. Fry the onions in the remaining fat for about three minutes.
  17. 17. Remove the pan from the stove.
  18. 18. Stir the crème fraîche into the onions.
  19. 19. Add the broth.
  20. 20. Add the vinegar.
  21. 21. Season the sauce with salt and pepper.
  22. 22. Place the pork medallions in a baking dish.
  23. 23. Distribute the onion sauce evenly over the medallions.
  24. 24. Place the ham-bread mixture on top of the medallions.

  26. 26. Cook the medallions in the oven for about 15 minutes.
