🍽️ Crispy Pork Medallions with Bacon Topping, Beans and Croquettes

Ingredients
- Parsley, fresh 20 g
- Toast bread 2 slices
- Onions, yellow 2 pcs.
- Pork tenderloin 600 g
- Salt pinch
- Pepper, black ground pinch
- Ham cubes 125 g
- Creme fraiche 200 g
- Poultry broth 200 ml
- Vinegar 1 tbsp
- Croquettes 800 g
- Green beans 500 g
- Bacon 100 g
- Butter 1 tbsp
Instructions
- 1. Preheat the oven to 160 degrees Celsius with fan.
- 2. Wash the parsley and shake it dry.
- 3. Pluck the parsley leaves from the stems and chop them finely.
- 4. Crumble the toast bread into small pieces.
- 5. Halve the onions and peel them.
- 6. Cut the onions into wedges.
- 7. Rinse the pork fillet and pat it dry.
- 8. Cut the fillet into medallions about five centimeters thick.
- 9. Season the medallions with salt and pepper.
- 10. Heat a frying pan on high heat.
- 11. Fry the ham cubes without additional fat for about three minutes.
- 12. Place the fried ham into a bowl.
- 13. Add the chopped parsley and the bread crumbs.
- 14. Season the mixture with some pepper and mix everything well.
- 15. Warm the pan again on medium heat.
- 16. Fry the onions in the remaining fat for about three minutes.
- 17. Remove the pan from the stove.
- 18. Stir the crème fraîche into the onions.
- 19. Add the broth.
- 20. Add the vinegar.
- 21. Season the sauce with salt and pepper.
- 22. Place the pork medallions in a baking dish.
- 23. Distribute the onion sauce evenly over the medallions.
- 24. Place the ham-bread mixture on top of the medallions.
- 25. Press the crust down lightly.
- 26. Cook the medallions in the oven for about 15 minutes.
- 27. Place the croquettes on a baking sheet lined with baking paper.
- 28. Increase the oven temperature to 180 degrees Celsius with fan.
- 29. Bake the croquettes for another 15 to 20 minutes.
- 30. Bring about two liters of salted water to a boil in a pot.
- 31. Rinse the beans.
- 32. Remove the ends of the beans.
- 33. Cook the beans in the boiling salted water for about eight minutes.
- 34. Drain the beans in a sieve.
- 35. Rinse the beans with cold water.
- 36. Divide the beans into portions.
- 37. Wrap each portion of beans with a slice of bacon.
- 38. Clean the frying pan.
- 39. Heat the pan with butter on high heat.
- 40. Fry the bacon-wrapped beans for about five minutes on all sides.
- 41. Serve the beans together with the croquettes, medallions and sauce.
