🍽️ Berlin-style Pork Medallions with Creamy Mashed Potatoes

Ingredients
- potatoes, floury 1 kg
- salt pinch
- vegetable onions 1 pc.
- apples, red 2 pc.
- lemons 1 pc.
- oil 4 tbsp
- pork fillet 600 g
- pepper, black ground pinch
- honey 1 tsp
- milk 100 ml
- butter 2 tbsp
Instructions
- 1. Thoroughly wash the potatoes under running water.
- 2. Peel the potatoes completely.
- 3. Cut the peeled potatoes into small, uniform cubes.
- 4. Fill a pot with water and add some salt.
- 5. Bring the salted water to a boil.
- 6. Add the potato cubes to the boiling water.
- 7. Reduce the heat to a medium setting.
- 8. Cook the potatoes for about 20 minutes.
- 9. Check with a fork to see if the potatoes are soft.
- 10. Peel the onion.
- 11. Remove the hard root end of the onion.
- 12. Slice the onion into thin rings.
- 13. Wash the apples thoroughly.
- 14. Cut the apples into quarters.
- 15. Remove the core from the apple quarters.
- 16. Cut the cored apple pieces into wedges.
- 17. Rinse the lemon under running water.
- 18. Cut the lemon in half.
- 19. Squeeze the juice from the lemon halves.
- 20. Preheat the oven to 160 degrees Celsius (convection mode).
- 21. Heat two tablespoons of oil in a large pan over high heat.
- 22. Rinse the pork fillet under cold water.
- 23. Pat the meat dry with a kitchen towel.
- 24. Slice the pork fillet into round medallions.
- 25. Season the medallions with salt.
- 26. Place the medallions in the hot pan.
- 27. Fry the medallions for about one to two minutes on one side.
- 28. Turn the medallions and fry them for another one to two minutes on the other side.
- 29. Remove the seared medallions from the pan.
- 30. Place the medallions in a baking dish.
- 31. Season the medallions in the dish with pepper.
- 32. Place the baking dish in the preheated oven.
- 33. Bake the medallions for about 12 minutes.
- 34. Heat two tablespoons of oil in the same pan over medium heat.
- 35. Add the onion rings to the pan.
- 36. Add the apple wedges to the pan.
- 37. Add one tablespoon of lemon juice.
- 38. Add some honey to the pan.
- 39. Season the mixture with a pinch of salt.
- 40. Sauté the onions and apples.
- 41. Cook the mixture for about 10 minutes over medium heat.
- 42. Taste the onion-apple mixture and adjust seasoning with salt and pepper.
- 43. Drain the cooking water from the potatoes.
- 44. Let the potatoes steam dry in the pot for a short moment.
- 45. Add milk to the warm potatoes.
- 46. Add a piece of butter to the potatoes.
- 47. Mash the potatoes with the milk and butter until creamy.
- 48. Season the mashed potatoes with salt and pepper.
- 49. Remove the finished pork medallions from the oven.
- 50. Place the mashed potatoes onto the plates.
- 51. Place the pork medallions on top of the mashed potatoes.
- 52. Arrange the warm onion-apple mixture around the meat.
- 53. Serve the dish immediately.
