  1. 1. Take the pork chops out of the fridge and let them sit on the counter until they reach room temperature.
  2. 2. Peel the peaches, halve them, and remove the pit. Cut the flesh into small cubes.
  3. 3. Halve the shallot, peel it, and dice it into fine pieces.
  4. 4. Wash the mint thoroughly and shake it dry. Pluck the leaves from the stems and chop them finely.
  5. 5. Heat the oil in a pot over high heat.
  6. 6. Add the peach cubes and the diced shallot to the pot and fry them for about 2 minutes.
  7. 7. Sprinkle the sugar over the mixture and stir well to distribute it evenly.
  8. 8. Deglaze the mixture with the balsamic vinegar.
  9. 9. Reduce the heat and let the sauce simmer for about 10 minutes.
  10. 10. Season the sauce with salt and pepper to taste.
  11. 11. Stir the chopped mint into the finished sauce.
  12. 12. Rinse the pork chops briefly and pat them completely dry with kitchen paper.
  13. 13. Rub the pork chops with some oil.
  14. 14. Place the pork chops on a hot grill and fry them for about 3 minutes per side.
