🍽️ Tender Pork Tenderloin with Homemade Potato Dumplings and Oven Tomatoes

Ingredients
- potatoes, mainly waxy 900 g
- salt 1 tbsp
- oil 1 tbsp
- pork fillet 600 g
- pepper, black ground pinch
- vegetable broth 300 ml
- bay leaves, dried 1 pc.
- eggs 3 pcs.
- cornstarch 3 tbsp
- lemons 1 pc.
- vine tomatoes 8 pcs.
- olive oil 1 tbsp
- cream cheese, plain 5 tbsp
Instructions
- 1. Preheat the oven to 140 degrees Celsius (convection mode).
- 2. Peel the potatoes and wash them thoroughly.
- 3. Cut the potatoes into small cubes.
- 4. Place the potato cubes into a pot.
- 5. Pour salted water over the potatoes.
- 6. Cook the potatoes for about 15 minutes over medium heat.
- 7. Heat oil in a frying pan over high heat.
- 8. Pat the pork tenderloin dry with a kitchen towel.
- 9. Season the meat with salt.
- 10. Sear the pork tenderloin for about 3 minutes.
- 11. Then season the meat with pepper.
- 12. Wrap the meat in aluminum foil.
- 13. Cook the meat in the oven for approx. 10 minutes.
- 14. Deglaze the pan drippings with broth.
- 15. Add a bay leaf to the sauce.
- 16. Let the sauce simmer for about 10 minutes over low heat.
- 17. Let the cooked potatoes drain.
- 18. Let the potatoes steam dry in the pot.
- 19. Clean the pot thoroughly.
- 20. Bring 3 liters of salted water to a boil in the pot.
- 21. Separate the eggs into yolks and whites.
- 22. Use the egg whites for another purpose.
- 23. Mash the potatoes finely in a bowl.
- 24. Mix the potatoes with the egg yolk.
- 25. Add 1 tablespoon of starch to the potato mixture.
- 26. Season the mixture with 2 pinches of salt.
- 27. Wet your hands with water.
- 28. Shape 12 dumplings from the potato mixture.
- 29. Cook the dumplings for approx. 15 minutes in boiling salted water.
- 30. Take the meat out of the oven.
- 31. Let the wrapped meat rest.
- 32. Increase the oven temperature to 180 degrees Celsius.
- 33. Halve the lemon.
- 34. Squeeze the juice from the lemon.
- 35. Wash the tomatoes.
- 36. Remove the stem from the tomatoes.
- 37. Brush the tomatoes with lemon juice.
- 38. Brush the tomatoes with olive oil.
- 39. Season the tomatoes with salt.
- 40. Season the tomatoes with pepper.
- 41. Place the tomatoes in a baking dish.
- 42. Bake the tomatoes for approx. 10 minutes in the oven.
- 43. Stir the cream cheese into the sauce.
- 44. Remove the bay leaf from the sauce.
- 45. Taste the sauce and adjust with salt and pepper.
- 46. Divide the meat into portions.
- 47. Take the tomatoes out of the oven.
- 48. Drain the dumplings.
- 49. Plate the pork tenderloin.
- 50. Add the potato dumplings to the plates.
- 51. Add the oven tomatoes to the plates.
- 52. Pour the sauce over the dish.
- 53. Serve the meal.
