🍽️ Tender Pork Tenderloin with Creamy Olive Mashed Potatoes and Tomatoes

Ingredients
- potatoes, floury 1 kg
- salt pinch
- pork fillet 600 g
- rosemary, fresh 5 g
- garlic cloves 2 pcs.
- oil 3 tbsp
- pepper, black ground pinch
- olives, black 50 g
- cherry tomatoes 250 g
- butter 5 tbsp
- sour cream 100 g
Instructions
- 1. Wash the potatoes thoroughly under running water.
- 2. Peel the potatoes and cut them into coarse cubes.
- 3. Place the potato cubes in a pot and cover them with salted water.
- 4. Bring the water to a boil.
- 5. Reduce the heat to medium and cover the pot.
- 6. Cook the potatoes for about 15 to 20 minutes until they are soft.
- 7. Rinse the pork tenderloins under cold water.
- 8. Pat the meat dry with a kitchen towel.
- 9. Cut the tenderloins into even pieces about 5 to 6 centimeters long.
- 10. Wash the rosemary and shake it dry.
- 11. Pluck the fine needles from the woody stems.
- 12. Finely chop the rosemary needles.
- 13. Peel the garlic cloves.
- 14. Chop the garlic finely.
- 15. Place the meat pieces in a bowl.
- 16. Add one tablespoon of oil.
- 17. Add the chopped rosemary and garlic.
- 18. Season with one to two pinches of salt.
- 19. Season with one to two pinches of pepper.
- 20. Rub the meat with the spices and oil.
- 21. Let the meat rest briefly to absorb the flavors.
- 22. Place the olives in a colander and let the water drain off.
- 23. Slice the olives into thin rings.
- 24. Wash the cherry tomatoes thoroughly.
- 25. Heat two tablespoons of oil in a large pan.
- 26. Place the meat pieces in the hot pan.
- 27. Fry the meat on all sides for about 2 to 3 minutes until golden brown.
- 28. Reduce the heat of the pan.
- 29. Add the washed tomatoes to the pan.
- 30. Add two tablespoons of butter.
- 31. Cover the pan with a lid.
- 32. Cook the meat with the tomatoes for about 5 to 7 minutes until done.
- 33. Place the potatoes in a colander and let the water drain off.
- 34. Let the potatoes steam briefly in the hot pot.
- 35. Add three tablespoons of butter to the pot.
- 36. Add sour cream.
- 37. Mash the potatoes with a potato masher until creamy.
- 38. Stir the olive rings into the mashed potatoes.
- 39. Season the mash to taste with salt.
- 40. Place the pork tenderloin on the plates.
- 41. Add the olive mashed potatoes.
- 42. Add the tomatoes.
- 43. Drizzle some pan juices over the meat.
