  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Rinse the pork tenderloin under running water.
  3. 3. Pat the meat completely dry with a kitchen towel.
  4. 4. Season the tenderloin with salt and pepper.
  5. 5. Peel the garlic clove and chop it finely.
  6. 6. Wash the fresh herbs under running water.
  7. 7. Dry the herbs thoroughly.
  8. 8. Remove the thick stems from the herbs.
  9. 9. Chop the herbs finely as well.
  10. 10. Separate the eggs and save the egg whites for later use.
  11. 11. Beat the soft butter in a bowl with a hand mixer until fluffy.
  12. 12. Add the mustard, egg yolk, chopped garlic, and herbs to the butter.
  13. 13. Mix all ingredients for the crust well together.
  14. 14. Sprinkle the breadcrumbs into the mixture.
  15. 15. Mix everything thoroughly again.
  16. 16. Season the herb crust with salt and pepper to taste.
  17. 17. Heat the oil in a frying pan over high heat.
  18. 18. Sear the pork tenderloin for about 5 minutes on all sides.
  19. 19. Cook the meat until it is golden brown.
  20. 20. Place the seared tenderloin into a baking dish.
  21. 21. Distribute the herb crust evenly over the meat.
  22. 22. Press the crust down slightly so it sticks.
  23. 23. Bake the tenderloin in the oven for about 15 minutes.
  24. 24. Remove the finished pork tenderloin with crust from the oven.
  25. 25. Slice the tenderloin into round medallions.
  26. 26. Plate the medallions.
