🍽️ Crispy Pork Tenderloin with Herb Coating

Ingredients
- Pork fillet 600 g
- Salt pinch
- Pepper, black ground pinch
- Garlic cloves 1 pc.
- Parsley, fresh 30 g
- Basil, fresh 20 g
- Thyme, fresh 5 g
- Eggs 2 pc.
- Butter 100 g
- Mustard 1 tsp
- Breadcrumbs 100 g
- Oil 2 tbsp
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Rinse the pork tenderloin under running water.
- 3. Pat the meat completely dry with a kitchen towel.
- 4. Season the tenderloin with salt and pepper.
- 5. Peel the garlic clove and chop it finely.
- 6. Wash the fresh herbs under running water.
- 7. Dry the herbs thoroughly.
- 8. Remove the thick stems from the herbs.
- 9. Chop the herbs finely as well.
- 10. Separate the eggs and save the egg whites for later use.
- 11. Beat the soft butter in a bowl with a hand mixer until fluffy.
- 12. Add the mustard, egg yolk, chopped garlic, and herbs to the butter.
- 13. Mix all ingredients for the crust well together.
- 14. Sprinkle the breadcrumbs into the mixture.
- 15. Mix everything thoroughly again.
- 16. Season the herb crust with salt and pepper to taste.
- 17. Heat the oil in a frying pan over high heat.
- 18. Sear the pork tenderloin for about 5 minutes on all sides.
- 19. Cook the meat until it is golden brown.
- 20. Place the seared tenderloin into a baking dish.
- 21. Distribute the herb crust evenly over the meat.
- 22. Press the crust down slightly so it sticks.
- 23. Bake the tenderloin in the oven for about 15 minutes.
- 24. Remove the finished pork tenderloin with crust from the oven.
- 25. Slice the tenderloin into round medallions.
- 26. Plate the medallions.
