🍽️ Crispy Pork Tenderloin with Roasted Ajvar and Flatbread

Ingredients
- Pork fillet 400 g
- Sweet peppers 750 g
- Garlic cloves 1 pc.
- Parsley, fresh 25 g
- Organic lemons 1 pc.
- Salt pinch
- Pepper, black ground pinch
- Oil 4 tbsp
- Flatbread 1 pc.
- sour cream 4 tbsp
Instructions
- 1. Preheat the oven to 230 degrees Celsius with top and bottom heat.
- 2. Pat the pork tenderloin dry with kitchen paper.
- 3. Let the meat rest at room temperature.
- 4. Wash the peppers thoroughly under running water.
- 5. Cut the peppers lengthwise.
- 6. Remove the seeds and the white inner pith.
- 7. Place the peppers skin-side up on a baking sheet lined with aluminum foil.
- 8. Add the unpeeled garlic cloves to the tray.
- 9. Put the tray in the oven for 20 to 25 minutes.
- 10. Take out the peppers when the skin has black charred spots.
- 11. Place the hot peppers into a bowl.
- 12. Cover the bowl with cling film.
- 13. Let the peppers steam for 10 minutes.
- 14. Continue using the baking tray with the pan juices and do not clean it.
- 15. Wash the parsley thoroughly.
- 16. Dry the parsley.
- 17. Pluck the parsley leaves from the stems.
- 18. Finely chop the parsley leaves.
- 19. Wash the lemon.
- 20. Cut the lemon in half.
- 21. Squeeze the juice from the lemon.
- 22. Peel the skin off the roasted pepper pieces.
- 23. Peel the skin off the roasted garlic cloves.
- 24. Finely chop the peppers and garlic on a cutting board.
- 25. Ensure the mixture forms a chunky paste.
- 26. Put the ajvar into a mixing bowl.
- 27. Fold the chopped parsley into the ajvar.
- 28. Season the mixture with salt to taste.
- 29. Season the mixture with pepper to taste.
- 30. Add one tablespoon of oil.
- 31. Add some lemon juice.
- 32. Mix everything well to adjust the flavor.
- 33. Heat one tablespoon of oil in a pan over high heat.
- 34. Season the pork tenderloin generously with salt.
- 35. Sear the meat in the hot oil all over.
- 36. Fry the meat for about 3 minutes until golden brown.
- 37. Reduce the heat to a low setting.
- 38. Cook the tenderloin with a lid on the pan.
- 39. Cook the meat for 3 to 4 minutes at low temperature.
- 40. Wrap the cooked meat in aluminum foil.
- 41. Let the meat rest before serving.
- 42. Brush the flatbread with the remaining oil.
- 43. Place the flatbread on the baking tray.
- 44. Put the flatbread in the oven for 3 to 4 minutes.
- 45. Take out the flatbread when it is crispy.
- 46. Slice the pork tenderloin.
- 47. Place the meat slices on the plates.
- 48. Add the ajvar to the plates.
- 49. Add the flatbread to the plates.
- 50. Add one tablespoon of sour cream.
- 51. Drizzle some remaining lemon juice over it.
- 52. Add some of the pan juices from the frying pan.
- 53. Serve the dish immediately.
