  2. 2. Peel the garlic cloves and chop them roughly.
  3. 3. Wash the rosemary.
  4. 4. Pluck the rosemary needles from the stems.
  5. 5. Finely chop the rosemary needles.
  6. 6. Put the chopped garlic and 3 tablespoons of olive oil into a tall container.
  7. 7. Blend the mixture into a fine paste.
  8. 8. Add half of the chopped rosemary needles to the garlic paste.
  9. 9. Add oregano and Italian herbs.
  10. 10. Season the marinade with salt and pepper.
  11. 11. Wash the pork loin.
  12. 12. Pat the loin dry with a kitchen towel.
  13. 13. Place the loin in a baking dish.
  14. 14. Rub the loin thoroughly with the marinade.
  15. 15. Wrap the loin tightly with bacon slices.
  16. 16. Drizzle the loin with 1 tablespoon of olive oil.
  17. 17. Place the loin in the oven.
  18. 18. Bake the loin for 25 to 30 minutes.
  19. 19. Wash the potatoes thoroughly.
  20. 20. Cut the potatoes into quarters or sixths depending on their size.
  21. 21. Place the potatoes on a baking sheet lined with baking paper.
  22. 22. Add the remaining chopped rosemary to the potatoes.
  23. 23. Add 1 tablespoon of olive oil to the potatoes.
  24. 24. Mix the potatoes well.
  25. 25. Season the potatoes lightly with salt.
  26. 26. Place the potatoes well spread out in the oven.
  27. 27. Bake the potatoes until golden brown for 20 to 25 minutes.
  28. 28. Take the meat and potatoes out of the oven.
  29. 29. Slice the pork loin as desired.
  30. 30. Plate the meat with the potatoes.
