🍽️ Crispy Pork Loin Wrapped in Bacon with Oven Potatoes

Ingredients
- garlic cloves 4 pcs.
- rosemary, fresh 10 g
- olive oil 5 tbsp
- oregano, dried 0.5 tsp
- Italian herbs, dried 0.5 tsp
- salt pinch
- pepper, black ground pinch
- pork fillet 600 g
- bacon 6 slices
- potatoes, mostly firm 1 kg
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan setting.
- 2. Peel the garlic cloves and chop them roughly.
- 3. Wash the rosemary.
- 4. Pluck the rosemary needles from the stems.
- 5. Finely chop the rosemary needles.
- 6. Put the chopped garlic and 3 tablespoons of olive oil into a tall container.
- 7. Blend the mixture into a fine paste.
- 8. Add half of the chopped rosemary needles to the garlic paste.
- 9. Add oregano and Italian herbs.
- 10. Season the marinade with salt and pepper.
- 11. Wash the pork loin.
- 12. Pat the loin dry with a kitchen towel.
- 13. Place the loin in a baking dish.
- 14. Rub the loin thoroughly with the marinade.
- 15. Wrap the loin tightly with bacon slices.
- 16. Drizzle the loin with 1 tablespoon of olive oil.
- 17. Place the loin in the oven.
- 18. Bake the loin for 25 to 30 minutes.
- 19. Wash the potatoes thoroughly.
- 20. Cut the potatoes into quarters or sixths depending on their size.
- 21. Place the potatoes on a baking sheet lined with baking paper.
- 22. Add the remaining chopped rosemary to the potatoes.
- 23. Add 1 tablespoon of olive oil to the potatoes.
- 24. Mix the potatoes well.
- 25. Season the potatoes lightly with salt.
- 26. Place the potatoes well spread out in the oven.
- 27. Bake the potatoes until golden brown for 20 to 25 minutes.
- 28. Take the meat and potatoes out of the oven.
- 29. Slice the pork loin as desired.
- 30. Plate the meat with the potatoes.
