🍽️ Schwarzwälder Cherry Jam

Ingredients
- lemon 1 pc.
- chocolate, dark 75 g
- cherries, fresh 500 g
- sour cherries in a jar 500 g
- cinnamon pinch
- jam sugar 500 g
Instructions
- 1. Cut the lemon in half and squeeze out the juice. Grate the chocolate finely. Wash the cherries, remove the stems and pits. Drain the sour cherries and collect the juice. In a tall container, crush two-thirds of the cherries with an immersion blender.
- 2. In a pot, bring the cherry puree, cherry juice, cherries, lemon juice, cinnamon and jam sugar to a boil over medium heat. Simmer for about three minutes, stirring occasionally. Then add the chocolate and let it melt.
- 3. To test the setting ability, place a teaspoon of the jam on a cold plate. If the jam sets after about a minute, it is ready for processing. Otherwise, extend the cooking time by one to two minutes and repeat the setting test.
- 4. Fill the Black Forest cherry jam hot into clean preserving jars. Close the jars and let them cool upside down. Enjoy your meal!
