🍰 Black Tea Rice Pudding with Pear-Fig Compote

Ingredients
- Milk 1500 ml
- Black tea 8 g
- Rice pudding rice 300 g
- Brown sugar 2 tbsp
- Pears 2 pcs
- Figs 3 pcs
- Apple juice 50 ml
- Cinnamon 0.25 tsp
- Mint, fresh 10 g
Instructions
- 1. In a pot, bring milk to a boil, add the tea bag, and let it steep for about 6 minutes. Then remove the bag and bring the milk back to a boil over medium heat. Stir in the rice pudding and 1 tablespoon of sugar, cook for about 1 minute, then let it swell for about 10 minutes.
- 2. Meanwhile, peel the pears, remove the cores, and cut them into cubes. Rinse the figs and also dice them. In a pot, combine the pears and figs with apple juice, the remaining sugar, and cinnamon, and bring to a boil over medium heat. Cook for about 10-15 minutes until soft, stirring occasionally.
- 3. Wash the mint, shake off excess water, and pluck the leaves from the stems. Divide the rice pudding with black tea into bowls, add the pear-fig compote on top, and garnish with fresh mint.
