  1. 1. In a pot, bring milk to a boil, add the tea bag, and let it steep for about 6 minutes. Then remove the bag and bring the milk back to a boil over medium heat. Stir in the rice pudding and 1 tablespoon of sugar, cook for about 1 minute, then let it swell for about 10 minutes.
  2. 2. Meanwhile, peel the pears, remove the cores, and cut them into cubes. Rinse the figs and also dice them. In a pot, combine the pears and figs with apple juice, the remaining sugar, and cinnamon, and bring to a boil over medium heat. Cook for about 10-15 minutes until soft, stirring occasionally.
  3. 3. Wash the mint, shake off excess water, and pluck the leaves from the stems. Divide the rice pudding with black tea into bowls, add the pear-fig compote on top, and garnish with fresh mint.
