  1. 1. Roast the almonds in a pan without oil over high heat for about 3 minutes. Turn them regularly. Remove the almonds from the pan and set them aside.
  2. 2. Wash the cucumber thoroughly. Cut off the ends. Slice or shave the cucumber into thin rounds. Place the slices in a bowl. Salt the cucumber slices. Set the bowl aside.
  3. 3. Wash the kohlrabi. Peel it. Remove woody parts if necessary. Slice the kohlrabi thinly. Cut the slices into thin sticks. Bring about 500 ml of salted water to a boil in a pot over medium heat. Cook the kohlrabi in the boiling water for about 10 minutes with the lid on. Drain the kohlrabi in a sieve.
  4. 4. Bring about 3 liters of salted water to a boil in a large pot. Wash the dill. Shake it dry. Pluck off the tips. Chop the dill coarsely. Squeeze the lime. Cook the maultaschen in the bubbling salted water for about 7 minutes. Ensure the water does not boil too vigorously.
  5. 5. Wash the lamb's lettuce thoroughly. Shake it dry. Drain the salted cucumber pieces in a sieve. Mix the cucumbers in a bowl with the dill, the lamb's lettuce, oil, and 1 tbsp of lime juice. Season with salt, pepper, sugar, and the remaining lime juice. Season the kohlrabi with salt and pepper.
  6. 6. Drain the maultaschen. Plate the maultaschen. Serve with the kohlrabi. Sprinkle the roasted almonds on top. Plate the salad in bowls. Serve the maultaschen with the kohlrabi and the cucumber lamb's lettuce salad. Enjoy your meal!
