  1. 1. Place flour, two eggs, a pinch of salt, and some oil on a clean work surface.
  2. 2. Knead the ingredients into a smooth and uniform dough.
  3. 3. Cut an onion in half and remove the skin.
  4. 4. Dice the onion into small cubes.
  5. 5. Wash the spinach thoroughly and shake off excess water.
  6. 6. Heat one tablespoon of oil in a pan over medium heat.
  7. 7. Sauté the onions for about two minutes.
  8. 8. Add the spinach to the pan and simmer for two minutes until it wilts.
  9. 9. Place the minced meat into a bowl.
  10. 10. Add the sautéed spinach, one egg, breadcrumbs, marjoram, salt, and pepper.
  11. 11. Mix the filling thoroughly with your hands or a spoon.
  12. 12. Roll out the dough on a work surface to a thickness of about 0.2 centimeters.
  13. 13. Divide the rolled-out dough into two equal halves.
  14. 14. Form eight to twelve small balls from the minced meat mixture.
  15. 15. Place the meat balls side by side with some space between them on one of the dough halves.
  16. 16. Lightly brush the dough between the balls with water.
  17. 17. Place the second dough half over the meat balls.
  18. 18. Press the dough firmly around the balls to seal them.
  19. 19. Cut the maultaschen into rectangular shapes using a knife or a pastry wheel.
  20. 20. Bring the broth to a boil in a pot.
  21. 21. Add the maultaschen to the boiling broth.
  22. 22. Cook the maultaschen for about ten minutes until they float to the surface.
  23. 23. Wash the chives and shake off excess water.
  24. 24. Cut the chives into small rings.
  25. 25. Serve the maultaschen together with the broth on plates.
  26. 26. Garnish the dish with the chive rings.
