🍽️ Schupfnudeln with Kasseler

Ingredients
- Shallots 1 pc.
- Apples, red 2 pc.
- Chives, fresh 10 g
- Sugar Pinch
- Vegetable broth 400 ml
- Kasseler, in one piece 600 g
- Salt Pinch
- Pepper, black ground Pinch
- Butter 2 tbsp
- Potato dumplings 500 g
- Hazelnut kernels, ground 20 g
Instructions
- 1. Cut the shallot in half, peel, and slice into thin rings. Wash the apples, quarter them, remove the core, and cut into cubes. Wash the chives, shake off excess water, and cut into small rolls.
- 2. In a pot, heat 1 tbsp sugar with 2 tbsp water over high heat and let it caramelize for about 2 minutes. When the sugar turns slightly brown, add the shallot rings and apple cubes, and deglaze with broth. Let everything simmer for about 10 minutes.
- 3. Rinse the Kasseler, pat dry, and cut into cubes of about 1 cm. Add the Kasseler cubes to the apple-shallot sauce and simmer over medium heat, stirring occasionally, for about 3 minutes. Season with salt and pepper.
- 4. Heat 2 tbsp butter in a pan over medium heat. Fry the Schupfnudeln in it for about 6 minutes, turning them around so they brown on all sides. Add the hazelnuts, and season with salt and pepper.
- 5. Plate the Schupfnudeln and serve with the Kasseler and apple-shallot sauce. Garnish with chives and enjoy. Bon appétit!
