  4. 4. Rinse the Kasseler briefly and pat it dry with a kitchen towel.
  5. 5. Cut the Kasseler into small cubes.
  6. 6. Wash the chives, shake them dry, and cut them into small rings.
  7. 7. Melt the butter in a large frying pan over medium heat.
  8. 8. Fry the Schupfnudeln in the butter for about 8 minutes until golden brown.
  9. 9. Turn the noodles frequently to ensure even browning.
  10. 10. Season the Schupfnudeln with salt and pepper.
  11. 11. Keep the finished noodles warm over low heat until you are ready to serve.
  12. 12. Heat the oil in a second frying pan over high heat.
  13. 13. Sauté the leek and onions in it for about 5 minutes.
