🍽️ Crispy Schupfnudeln with Kasseler and Leek

Ingredients
- Leek 1 pc.
- Onions, yellow 1 pc.
- Kasseler, in one piece 600 g
- Chives, fresh 10 g
- Butter 2 tbsp
- Schupfnudeln 800 g
- Salt pinch
- Pepper, black ground pinch
- Oil 2 tbsp
- Whipping cream 200 g
- Fried onions 4 tbsp
Instructions
- 1. Cut the leek lengthwise and remove the tough root ends.
- 2. Slice the leek into thin rings and rinse them under running water.
- 3. Halve the onion, peel it, and slice it into thin strips.
- 4. Rinse the Kasseler briefly and pat it dry with a kitchen towel.
- 5. Cut the Kasseler into small cubes.
- 6. Wash the chives, shake them dry, and cut them into small rings.
- 7. Melt the butter in a large frying pan over medium heat.
- 8. Fry the Schupfnudeln in the butter for about 8 minutes until golden brown.
- 9. Turn the noodles frequently to ensure even browning.
- 10. Season the Schupfnudeln with salt and pepper.
- 11. Keep the finished noodles warm over low heat until you are ready to serve.
- 12. Heat the oil in a second frying pan over high heat.
- 13. Sauté the leek and onions in it for about 5 minutes.
- 14. Season the vegetables with salt and pepper.
- 15. Add the Kasseler cubes and the cream to the pan.
- 16. Bring the mixture to a boil.
- 17. Remove the pan from the heat as soon as the cream boils.
- 18. Cover the pan and keep the dish warm.
- 19. Finally, adjust the sauce to taste with salt and pepper.
- 20. Plate the Schupfnudeln, the Kasseler vegetables, and the sauce.
- 21. Garnish the dish with the chopped chive rings and fried onions.
