🍽️ Classic Schtschi – Russian Cabbage Soup

Ingredients
- Savoy cabbage 0.5 pc.
- Onions, yellow 1 pc.
- Soup vegetables 1 bunch
- Oil 1 tbsp
- Bacon strips 100 g
- Vegetable broth 2 L
- Bay leaves, dried 2 pc.
- Pepper, black ground pinch
- Parsley, fresh 10 g
Instructions
- 1. Wash the cabbage and cut it into four large quarters.
- 2. Remove the hard core from the center of each piece.
- 3. Cut the remaining cabbage into thin strips.
- 4. Halve the onions and remove the outer skin.
- 5. Dice the onions very finely.
- 6. Wash the soup vegetables thoroughly.
- 7. Remove the hard ends from the vegetables if necessary.
- 8. Dice the soup vegetables into coarse chunks.
- 9. Heat a pot over medium heat.
- 10. Add one tablespoon of oil to the hot pot.
- 11. Fry the bacon for about three minutes until it is crispy.
- 12. Add the diced onions to the pot.
- 13. Sauté the onions for about two minutes until they look translucent.
- 14. Deglaze the mixture with vegetable broth.
- 15. Add the coarsely diced soup vegetables to the broth.
- 16. Add the bay leaves to the soup.
- 17. Add pepper to the soup.
- 18. Reduce the heat to low.
- 19. Cover the pot with a lid.
- 20. Let the soup simmer for about 15 minutes.
- 21. Add the cabbage strips about two minutes before the end of the cooking time.
- 22. Cook the cabbage until it is tender but still firm to the bite.
- 23. Wash the parsley in the meantime.
- 24. Shake the parsley dry.
- 25. Remove the coarse stems from the parsley.
- 26. Finely chop the parsley.
- 27. Fill the finished cabbage soup into deep plates.
- 28. Sprinkle the soup with the fresh parsley.
- 29. Serve the Schtschi immediately and enjoy your meal.
