  1. 1. In a pot, bring about 1 liter of water to a boil and hard-boil 4 eggs for around 10 minutes. Then drain, pour cold water over them, peel, and let cool.
  2. 2. Cut the onion in half, peel, and dice finely. Wash the parsley, shake it dry, pluck the leaves from the stems, and chop them as well. Separate one egg (the egg white can be used for something else).
  3. 3. In a bowl, mix the minced meat well with the onion, the egg yolk, the parsley, and pepper. Divide the mixture into four portions and shape them into flat oval forms. Wrap the eggs in the minced meat mixture, making sure the layer is evenly thin.
  4. 4. Beat the remaining egg in a deep plate and whisk. Place the breadcrumbs on another plate. Roll the wrapped eggs first in the egg and then in the breadcrumbs.
  5. 5. Heat the frying oil in a pot until bubbles appear when a wooden spoon is dipped in. Fry the eggs in portions for about 5 minutes until crispy, turning them several times. Let them drain on kitchen paper and enjoy warm or cold. Bon appétit!
