🍰 Chocolate Kaiserschmarrn with Cherries

Ingredients
- heavy cream 200 g
- vanilla extract 2 tsp
- sour cream 200 g
- jarred sour cherries 350 g
- cornstarch 1 tsp
- orange paste 1 tsp
- sugar 120 g
- eggs 3 pcs
- salt pinch
- wheat flour, Type 405 100 g
- cocoa powder 25 g
- milk 250 g
- cooking spray pinch
- butter 50 g
- baking chocolate, semi-sweet 50 g
Instructions
- 1. Whip the cream together with one teaspoon of vanilla extract until stiff.
- 2. Stir the sour cream into the whipped cream.
- 3. Place the finished cream in the cool until you serve it.
- 4. Mix some cherry juice with the starch in a pot until there are no more lumps.
- 5. Add the cherries and the remaining juice to the mixture.
- 6. Stir in the orange paste and 50 grams of sugar.
- 7. Bring the mixture to a boil while stirring.
- 8. Let the compote thicken over medium-high heat for about three to four minutes.
- 9. Whisk the egg whites together with a pinch of salt.
- 10. Add 30 grams of sugar to the egg whites and stir until the sugar is dissolved.
- 11. The egg whites should not be completely stiff so that they are easier to fold in.
- 12. Whisk the egg yolk creamy with one teaspoon of vanilla extract.
- 13. Sift the flour and cocoa into a bowl.
- 14. Stir the flour and cocoa in alternation with the lukewarm milk.
- 15. Fold the egg whites into the batter.
- 16. Grease a pan with some baking spray.
- 17. Heat the pan over medium-high heat.
- 18. Pour the batter into the hot pan.
- 19. Bake the Kaiserschmarrn for about eight minutes.
- 20. Place the Kaiserschmarrn in the oven for about four minutes at 190 degrees Celsius with top and bottom heat.
- 21. Tear the Kaiserschmarrn into coarse pieces using two forks.
- 22. Add the butter and 40 grams of sugar to the Kaiserschmarrn in the pan.
- 23. Fry the Kaiserschmarrn until the sugar is caramelized.
- 24. Continue frying the Kaiserschmarrn until it is slightly crispy.
- 25. Serve the warm Kaiserschmarrn with the cherry compote and the cream.
- 26. Grate the dark chocolate over the Kaiserschmarrn.
