  2. 2. Stir the sour cream into the whipped cream.
  3. 3. Place the finished cream in the cool until you serve it.
  4. 4. Mix some cherry juice with the starch in a pot until there are no more lumps.
  5. 5. Add the cherries and the remaining juice to the mixture.
  6. 6. Stir in the orange paste and 50 grams of sugar.
  7. 7. Bring the mixture to a boil while stirring.
  8. 8. Let the compote thicken over medium-high heat for about three to four minutes.
  9. 9. Whisk the egg whites together with a pinch of salt.
  10. 10. Add 30 grams of sugar to the egg whites and stir until the sugar is dissolved.
  11. 11. The egg whites should not be completely stiff so that they are easier to fold in.
  12. 12. Whisk the egg yolk creamy with one teaspoon of vanilla extract.
  13. 13. Sift the flour and cocoa into a bowl.
  14. 14. Stir the flour and cocoa in alternation with the lukewarm milk.
  15. 15. Fold the egg whites into the batter.
  16. 16. Grease a pan with some baking spray.

  22. 22. Add the butter and 40 grams of sugar to the Kaiserschmarrn in the pan.
  23. 23. Fry the Kaiserschmarrn until the sugar is caramelized.
  24. 24. Continue frying the Kaiserschmarrn until it is slightly crispy.
  25. 25. Serve the warm Kaiserschmarrn with the cherry compote and the cream.
  26. 26. Grate the dark chocolate over the Kaiserschmarrn.
