🍰 Fluffy Chocolate Rolls

Ingredients
- milk 220 ml
- yeast, fresh 1 pc
- butter 80 g
- eggs 2 pc
- crème fraîche 100 g
- wheat flour, type 405 500 g
- salt 0.25 tsp
- chocolate chips 150 g
- oil for greasing 1 tbsp
- sugar 90 g
Instructions
- 1. Take two tablespoons of the milk and set them aside.
- 2. Add the remaining room-temperature milk, the crumbled yeast, and the sugar to the mixing container.
- 3. Warm the mixture with the measuring cup in place for three minutes at speed 1 and 37 degrees Celsius.
- 4. Add the butter in pieces, one egg, the crème fraîche, the flour, and a quarter teaspoon of salt.
- 5. Process the ingredients with the measuring cup in place and the dough kneading attachment for two minutes to form a smooth dough.
- 6. Transfer the yeast dough into a bowl.
- 7. Cover the bowl and let the dough rise in a warm place for at least 30 minutes.
- 8. Wait until the volume of the dough has doubled.
- 9. Preheat the oven to 200 degrees Celsius.
- 10. Place an oven-safe dish filled with water on the bottom of the oven.
- 11. Add the chocolate chips to the dough.
- 12. Knead the chips evenly into the dough by hand.
- 13. Grease a baking dish.
- 14. Separate the remaining egg and use the egg white for something else.
- 15. Divide the dough into 16 equal portions.
- 16. Shape the portions into rolls.
- 17. Place the rolls side by side in the baking dish.
- 18. Whisk the egg yolk and the reserved milk together in a small bowl.
- 19. Brush the rolls with the egg yolk and milk mixture.
- 20. Bake the rolls for about 30 minutes.
- 21. Let the rolls cool on a wire rack for about 20 minutes.
