  1. 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  2. 2. Chop the chocolate into small pieces.
  3. 3. Mix the sugar and cinnamon in a small bowl.
  4. 4. Roll out the dough flat.
  5. 5. Cut the dough into four equal quarters.
  6. 6. Cut each quarter diagonally in half to create a total of 16 triangles.
  7. 7. Brush each triangle thinly with butter.
  8. 8. Leave a narrow border free at the outer end of the triangle.
  9. 9. Sprinkle some of the cinnamon-sugar mixture in the center of each triangle.
  10. 10. Distribute a few chocolate pieces on top of the cinnamon-sugar mixture.
  11. 11. Roll each triangle from the wide base to the pointed tip.
  12. 12. Shape the rolled triangles into a classic croissant shape.
  13. 13. Place the croissants on a baking sheet lined with baking paper.
  14. 14. Bake the croissants for about 12 minutes in the preheated oven.
  15. 15. Remove the croissants from the oven and let them cool down briefly.
  16. 16. Serve the chocolate-cinnamon croissants lukewarm or after they have cooled completely.
