🍰 Chocolate Plum Cake with Cinnamon Meringue

Ingredients
- Chocolate, dark 100 g
- Plums 600 g
- Butter 125 g
- Brown sugar 150 g
- Salt pinch
- Eggs 4 pcs.
- Wheat flour, Type 405 180 g
- Cocoa powder 2 tbsp
- Baking powder 2 tsp
- Yogurt, plain 60 g
- Milk 100 ml
- Lemons 1 pc.
- Sugar 150 g
- Cinnamon 1 tsp
Instructions
- 1. Bring about 500 milliliters of water to a boil in a pot.
- 2. Chop the chocolate into small pieces.
- 3. Melt the chocolate pieces in a bowl over the hot water bath.
- 4. Let the melted chocolate cool down.
- 5. Preheat the oven to 175 degrees Celsius (top and bottom heat).
- 6. Wash the plums thoroughly.
- 7. Halve the plums and remove the pits.
- 8. Mix the soft butter, cane sugar, and salt in a bowl with a hand mixer and whisk until creamy.
- 9. Separate the eggs.
- 10. Set aside the egg whites for the meringue.
- 11. Work the egg yolk into the batter gradually.
- 12. Work the remaining egg into the batter gradually.
- 13. Stir the cooled liquid chocolate into the batter.
- 14. Gently fold in the flour, cocoa powder, baking powder, yogurt, and milk.
- 15. Grease a 26-centimeter springform pan.
- 16. Line the bottom of the springform pan with baking paper.
- 17. Pour the batter into the prepared pan.
- 18. Distribute the plums evenly over the batter.
- 19. Place the plums with the cut side facing up on the cake.
- 20. Bake the cake in the preheated oven for about 30 minutes.
- 21. Halve the lemon.
- 22. Squeeze the juice from the lemon.
- 23. Whip the egg whites in a bowl with a hand mixer until stiff.
- 24. Mix the sugar and cinnamon.
- 25. Slowly add the sugar-cinnamon mixture to the egg whites while stirring constantly.
- 26. Continue whipping until a firm meringue forms.
- 27. Stir the lemon juice briefly into the meringue mixture.
- 28. Spread the meringue mixture evenly over the partially baked cake.
- 29. Bake the cake at the same temperature for another 20 to 25 minutes.
- 30. Let the chocolate plum cake with cinnamon meringue cool down.
