  1. 1. Gently warm the milk in a pot for about one minute.
  2. 2. Crumble the yeast into a small bowl.
  3. 3. Dissolve the yeast together with one tablespoon of sugar in the lukewarm milk.
  4. 4. Cover the yeast mixture and let it rest for about 15 minutes.
  5. 5. Mix 40 grams of sugar, flour, salt, and 50 grams of cubed butter in a bowl.
  6. 6. Pour in the yeast milk and the egg.
  7. 7. Knead everything into a smooth dough.
  8. 8. Cover the bowl with a clean kitchen towel.
  9. 9. Let the dough rise in a warm place for about one hour until it has doubled in size.
  10. 10. Chop the chocolate roughly.
  11. 11. Rinse the orange thoroughly.
  12. 12. Grate about one tablespoon of fine orange zest.
  13. 13. Halve the orange and squeeze out the juice.
  14. 14. Melt 50 grams of butter in a pot over medium heat.
  15. 15. Remove the pot from the heat.
  16. 16. Add the powdered sugar and the chocolate.
  17. 17. Mix the ingredients well.
  18. 18. Stir in cinnamon, three-quarters of the grated orange zest, and cocoa.
  19. 19. Transfer the chocolate mixture into a bowl.
  20. 20. Let the filling cool down.
  21. 21. Grease a loaf pan (30 cm).
  22. 22. Line the pan with baking paper so that it overhangs on the long sides.
  23. 23. Knead the dough again briefly.
  24. 24. Roll out the dough on a floured surface into a rectangle (approx. 30 x 40 cm).
  25. 25. Spread the chocolate cream over the dough.
  26. 26. Leave a border free.
  27. 27. Sprinkle the nuts over it.
  28. 28. Roll the dough up tightly from the long side.
  29. 29. Press the edge firmly.
  30. 30. Halve the roll lengthwise.
  31. 31. Twist the two halves together like a braid with the cut sides facing up.
  32. 32. Place the babka into the prepared loaf pan.
  33. 33. Cover the pan.
  34. 34. Let the babka rise in a warm place for about 30 minutes.
  35. 35. Preheat the oven to 175 °C (top/bottom heat).
  36. 36. Simmer 50 grams of sugar together with the orange juice in a pot over medium heat for about 3 minutes until bubbling.
  37. 37. Add honey and the remaining orange zest.
  38. 38. Cook the mixture for about 1 minute.
  39. 39. Let the syrup cool down.
  40. 40. Bake the babka in the oven for about 30 to 35 minutes.
  41. 41. Loosely cover the babka with aluminum foil after about 20 minutes so it does not get too dark.
  42. 42. Remove the babka from the oven.
  43. 43. Brush the surface several times with the orange syrup.
  44. 44. Let the babka cool completely.
  45. 45. Remove the babka from the pan.
  46. 46. Slice the babka.
