🍰 Chocolate-Orange Babka

Ingredients
- milk 125 ml
- yeast, fresh 0.5 pcs
- sugar 100 g
- wheat flour, Type 405 300 g
- salt pinch
- butter 100 g
- eggs 1 pcs
- chocolate, dark 100 g
- oranges 1 pcs
- powdered sugar 100 g
- cinnamon 0.5 tsp
- cocoa powder 2 tbsp
- pecan nuts 60 g
- honey 30 g
Instructions
- 1. Gently warm the milk in a pot for about one minute.
- 2. Crumble the yeast into a small bowl.
- 3. Dissolve the yeast together with one tablespoon of sugar in the lukewarm milk.
- 4. Cover the yeast mixture and let it rest for about 15 minutes.
- 5. Mix 40 grams of sugar, flour, salt, and 50 grams of cubed butter in a bowl.
- 6. Pour in the yeast milk and the egg.
- 7. Knead everything into a smooth dough.
- 8. Cover the bowl with a clean kitchen towel.
- 9. Let the dough rise in a warm place for about one hour until it has doubled in size.
- 10. Chop the chocolate roughly.
- 11. Rinse the orange thoroughly.
- 12. Grate about one tablespoon of fine orange zest.
- 13. Halve the orange and squeeze out the juice.
- 14. Melt 50 grams of butter in a pot over medium heat.
- 15. Remove the pot from the heat.
- 16. Add the powdered sugar and the chocolate.
- 17. Mix the ingredients well.
- 18. Stir in cinnamon, three-quarters of the grated orange zest, and cocoa.
- 19. Transfer the chocolate mixture into a bowl.
- 20. Let the filling cool down.
- 21. Grease a loaf pan (30 cm).
- 22. Line the pan with baking paper so that it overhangs on the long sides.
- 23. Knead the dough again briefly.
- 24. Roll out the dough on a floured surface into a rectangle (approx. 30 x 40 cm).
- 25. Spread the chocolate cream over the dough.
- 26. Leave a border free.
- 27. Sprinkle the nuts over it.
- 28. Roll the dough up tightly from the long side.
- 29. Press the edge firmly.
- 30. Halve the roll lengthwise.
- 31. Twist the two halves together like a braid with the cut sides facing up.
- 32. Place the babka into the prepared loaf pan.
- 33. Cover the pan.
- 34. Let the babka rise in a warm place for about 30 minutes.
- 35. Preheat the oven to 175 °C (top/bottom heat).
- 36. Simmer 50 grams of sugar together with the orange juice in a pot over medium heat for about 3 minutes until bubbling.
- 37. Add honey and the remaining orange zest.
- 38. Cook the mixture for about 1 minute.
- 39. Let the syrup cool down.
- 40. Bake the babka in the oven for about 30 to 35 minutes.
- 41. Loosely cover the babka with aluminum foil after about 20 minutes so it does not get too dark.
- 42. Remove the babka from the oven.
- 43. Brush the surface several times with the orange syrup.
- 44. Let the babka cool completely.
- 45. Remove the babka from the pan.
- 46. Slice the babka.
