🍰 Chocolate Almond Muffins

Ingredients
- almonds, whole 100 g
- chocolate, dark 125 g
- eggs 3 pcs.
- powdered sugar 100 g
- butter 75 g
- wheat flour, Type 405 60 g
- baking powder 1 tsp
- cocoa powder 1 tsp
- cinnamon 0.25 tsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Finely chop the almonds and the chocolate.
- 3. Separate the eggs. Put the egg whites in a clean bowl and the yolks in another.
- 4. Sift the powdered sugar through a sieve.
- 5. Beat the egg whites with a hand mixer and the whisk attachment until stiff.
- 6. Slowly trickle in 30 grams of powdered sugar while beating.
- 7. Continue beating until the mixture is firm and shiny.
- 8. Mix the butter, the egg yolk, and the remaining powdered sugar in the second bowl with the hand mixer.
- 9. Keep mixing until a creamy consistency forms.
- 10. Add the chopped almonds and chocolate to the butter-yolk mixture.
- 11. Add the flour and the baking powder as well.
- 12. Take about one-third of the egg white foam and stir it in.
- 13. Gently fold in the remaining egg white foam with a spoon.
- 14. Line a muffin tin with paper liners.
- 15. Distribute the batter evenly among the paper cups.
- 16. Bake the muffins for about 20 to 25 minutes.
- 17. Dust the finished muffins with powdered sugar, cocoa powder, and cinnamon.
- 18. Serve the muffins and enjoy.
