🍰 Chocolate Almond Cakes

Ingredients
- Chocolate, dark 100 g
- Eggs 2 pcs.
- Icing sugar 80 g
- Salt pinch
- Vanilla sugar 1 tsp
- Almonds, ground 40 g
- Wheat flour, Type 405 50 g
- Cocoa powder 2 tbsp
- Butter 1 tbsp
- sour cream 4 tbsp
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Bring about 500 milliliters of water to a boil in a pot.
- 3. Roughly chop the chocolate.
- 4. Place the chocolate pieces into a metal bowl.
- 5. Place the metal bowl over the pot with the hot water.
- 6. Let the chocolate melt in the hot steam.
- 7. Separate the eggs so that you have the yolks and whites separated.
- 8. Put the egg yolks into a separate bowl.
- 9. Add powdered sugar, salt, and vanilla sugar to the egg yolks.
- 10. Beat the mixture until creamy using a hand mixer.
- 11. Stir the creamy egg yolk mixture into the melted chocolate.
- 12. Beat the egg whites until stiff using a hand mixer.
- 13. Gently fold the almonds into the stiff egg whites.
- 14. Gently fold the flour into the egg white mixture.
- 15. Gently fold the cocoa powder into the egg white mixture.
- 16. Grease 4 to 6 ovenproof cups with butter.
- 17. Fill the chocolate egg white mixture into the prepared cups.
- 18. Place the chocolate cream on top of the chocolate egg white mixture.
- 19. Bake the cakes for about 25 minutes in the oven.
- 20. Take the cakes out of the oven when they are covered with egg white foam.
- 21. Serve the chocolate almond cakes hot or cold.
- 22. Add a dollop of sour cream.
