  1. 1. Preheat the oven to 180 degrees Celsius.
  2. 2. Bring about 500 milliliters of water to a boil in a pot.
  3. 3. Roughly chop the chocolate.
  4. 4. Place the chocolate pieces into a metal bowl.
  5. 5. Place the metal bowl over the pot with the hot water.
  6. 6. Let the chocolate melt in the hot steam.
  7. 7. Separate the eggs so that you have the yolks and whites separated.
  8. 8. Put the egg yolks into a separate bowl.
  9. 9. Add powdered sugar, salt, and vanilla sugar to the egg yolks.
  10. 10. Beat the mixture until creamy using a hand mixer.
  11. 11. Stir the creamy egg yolk mixture into the melted chocolate.
  12. 12. Beat the egg whites until stiff using a hand mixer.
  13. 13. Gently fold the almonds into the stiff egg whites.
  14. 14. Gently fold the flour into the egg white mixture.
  15. 15. Gently fold the cocoa powder into the egg white mixture.
  16. 16. Grease 4 to 6 ovenproof cups with butter.
  17. 17. Fill the chocolate egg white mixture into the prepared cups.
  18. 18. Place the chocolate cream on top of the chocolate egg white mixture.
  19. 19. Bake the cakes for about 25 minutes in the oven.
  20. 20. Take the cakes out of the oven when they are covered with egg white foam.
  21. 21. Serve the chocolate almond cakes hot or cold.
  22. 22. Add a dollop of sour cream.
