🍰 Chocolate Raspberry Clafoutis

Ingredients
- Eggs 4 pcs.
- sugar 100 g
- vanilla sugar 2 tsp.
- salt pinch
- crème fraîche 150 g
- milk 100 ml
- wheat flour, Type 405 40 g
- almonds, ground 20 g
- cocoa powder 20 g
- raspberries, fresh 400 g
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Whisk eggs, sugar, vanilla sugar, and salt in a bowl with a hand mixer until frothy.
- 3. Stir in the crème fraîche and milk into the egg mixture.
- 4. Mix flour, almonds, and cocoa and stir them briefly into the batter.
- 5. Let the batter rest and swell for about 15 minutes.
- 6. Wash the raspberries and sort them if necessary.
- 7. Drain the raspberries well.
- 8. Distribute the raspberries in a greased baking dish.
- 9. Pour the batter over the raspberries.
- 10. Bake the clafoutis for approx. 40 minutes until the batter is set.
- 11. Serve the clafoutis hot or slightly cooled.
- 12. Dust the pastry with cocoa.
