  1. 1. Preheat the oven to 180 degrees Celsius with fan.
  2. 2. Whisk eggs, sugar, vanilla sugar, and salt in a bowl with a hand mixer until frothy.
  3. 3. Stir in the crème fraîche and milk into the egg mixture.
  4. 4. Mix flour, almonds, and cocoa and stir them briefly into the batter.
  5. 5. Let the batter rest and swell for about 15 minutes.
  6. 6. Wash the raspberries and sort them if necessary.
  7. 7. Drain the raspberries well.
  8. 8. Distribute the raspberries in a greased baking dish.
  9. 9. Pour the batter over the raspberries.
  10. 10. Bake the clafoutis for approx. 40 minutes until the batter is set.
  11. 11. Serve the clafoutis hot or slightly cooled.
  12. 12. Dust the pastry with cocoa.
