  1. 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
  2. 2. Crumble the yeast into the milk and stir in 1 tablespoon of sugar until dissolved.
  3. 3. Cover the pot and let the yeast milk rest for about 10 minutes.
  4. 4. Separate the eggs and save the egg whites for another use.
  5. 5. In a bowl, combine the yeast milk with the remaining sugar, 100 g of butter, salt, 4 egg yolks, and flour.
  6. 6. Knead the ingredients into a smooth dough.
  7. 7. Let the dough rise for about 1 hour.
  8. 8. Cut 50 g of chocolate into 12 pieces.
  9. 9. Finely chop the remaining chocolate.
  10. 10. Knead the dough again on a floured surface.
  11. 11. Divide the dough into 15 equal portions.
  12. 12. Shape 12 portions into balls.
  13. 13. Flatten the balls slightly.
  14. 14. Place a piece of chocolate in the center of each ball.
  15. 15. Reshape the dough into a ball.
  16. 16. Place the balls in the greased cavities of a muffin tin.
  17. 17. Press down slightly on top of the balls.
  18. 18. Quarter the remaining 3 dough portions.
  19. 19. Form small balls from the quarters.
  20. 20. Place the small balls on top of the brioches.
  21. 21. Press the small balls down firmly.
  22. 22. Cover the brioches and let them rise for about 1 hour.
  23. 23. Preheat the oven to 200 °C (fan).
  24. 24. Whisk one egg yolk with 2 teaspoons of cold water in a bowl.
  25. 25. Brush the chocolate brioches evenly with the egg yolk and water mixture.
  26. 26. Bake the brioches in the oven for about 15 minutes.
  27. 27. Let the brioches cool slightly.
  28. 28. Bring about 300 ml of water to a boil in a pot.
  29. 29. Melt the chopped chocolate with the remaining butter in a metal bowl over a water bath.
  30. 30. Remove the chocolate brioches from the molds.
  31. 31. Dip the tops of the brioches lightly into the chocolate.
  32. 32. Set the brioches aside to dry.
