🍰 Chocolate Brioche

Ingredients
- milk 250 ml
- yeast, fresh 0.5 pcs
- sugar 80 g
- eggs 5 pcs
- butter 130 g
- salt pinch
- wheat flour, Type 405 550 g
- chocolate, dark 100 g
Instructions
- 1. Warm the milk in a pot for about 1 minute until it is lukewarm.
- 2. Crumble the yeast into the milk and stir in 1 tablespoon of sugar until dissolved.
- 3. Cover the pot and let the yeast milk rest for about 10 minutes.
- 4. Separate the eggs and save the egg whites for another use.
- 5. In a bowl, combine the yeast milk with the remaining sugar, 100 g of butter, salt, 4 egg yolks, and flour.
- 6. Knead the ingredients into a smooth dough.
- 7. Let the dough rise for about 1 hour.
- 8. Cut 50 g of chocolate into 12 pieces.
- 9. Finely chop the remaining chocolate.
- 10. Knead the dough again on a floured surface.
- 11. Divide the dough into 15 equal portions.
- 12. Shape 12 portions into balls.
- 13. Flatten the balls slightly.
- 14. Place a piece of chocolate in the center of each ball.
- 15. Reshape the dough into a ball.
- 16. Place the balls in the greased cavities of a muffin tin.
- 17. Press down slightly on top of the balls.
- 18. Quarter the remaining 3 dough portions.
- 19. Form small balls from the quarters.
- 20. Place the small balls on top of the brioches.
- 21. Press the small balls down firmly.
- 22. Cover the brioches and let them rise for about 1 hour.
- 23. Preheat the oven to 200 °C (fan).
- 24. Whisk one egg yolk with 2 teaspoons of cold water in a bowl.
- 25. Brush the chocolate brioches evenly with the egg yolk and water mixture.
- 26. Bake the brioches in the oven for about 15 minutes.
- 27. Let the brioches cool slightly.
- 28. Bring about 300 ml of water to a boil in a pot.
- 29. Melt the chopped chocolate with the remaining butter in a metal bowl over a water bath.
- 30. Remove the chocolate brioches from the molds.
- 31. Dip the tops of the brioches lightly into the chocolate.
- 32. Set the brioches aside to dry.
