🍰 Chocolate Pear Strudel

Ingredients
- flour, Type 405 250 g
- salt pinch
- eggs 1 pc.
- water 125 ml
- sunflower oil 20 g
- pears 400 g
- lemons 1 pc.
- sugar 30 g
- cinnamon 0.5 tsp
- tonka bean paste 1 tsp
- cornstarch 1 tbsp
- chocolate, dark 100 g
- almonds, sliced 90 g
- butter 40 g
- powdered sugar 40 g
Instructions
- 1. Mix the flour with a pinch of salt, the egg, the water, and the sunflower oil.
- 2. Knead the ingredients into a smooth dough.
- 3. Divide the dough into two equal portions.
- 4. Shape the portions into two balls.
- 5. Lightly coat the dough balls with oil.
- 6. Let the balls rest covered for about 30 minutes.
- 7. Peel the pears and remove the core.
- 8. Cut the flesh into fine cubes.
- 9. Add the lemon zest and lemon juice to the pear mixture.
- 10. Sprinkle sugar and cinnamon over it.
- 11. Add the tonka paste and the starch.
- 12. Mix all filling ingredients together briefly.
- 13. Finely chop the chocolate.
- 14. Fold in the chocolate pieces and 50 g of sliced almonds into the filling.
- 15. Cover the prepared filling until you are ready to use it.
- 16. Preheat the oven to 190 °C fan-forced.
- 17. Line a baking tray with non-stick baking paper.
- 18. Sprinkle some flour onto a clean tea towel.
- 19. Roll out the first dough portion thinly on the towel.
- 20. Stretch the dough with your hands to the size of the towel.
- 21. Spread half of the filling over the dough.
- 22. Fold the sides of the dough over the filling.
- 23. Roll the strudel tightly using the towel.
- 24. Repeat the steps for the second dough portion and the rest of the filling.
- 25. Melt the butter in a small saucepan.
- 26. Brush the strudels with the melted butter.
- 27. Sprinkle the remaining 40 g of sliced almonds over them.
- 28. Bake the strudels in the preheated oven for about 30 to 35 minutes.
- 29. Dust powdered sugar over the warm strudel.
- 30. Serve the strudel warm or cold.
- 31. Garnish with a scoop of ice cream or vanilla sauce if desired.
