  1. 1. Mix the flour with a pinch of salt, the egg, the water, and the sunflower oil.
  2. 2. Knead the ingredients into a smooth dough.
  3. 3. Divide the dough into two equal portions.
  4. 4. Shape the portions into two balls.
  5. 5. Lightly coat the dough balls with oil.
  6. 6. Let the balls rest covered for about 30 minutes.
  7. 7. Peel the pears and remove the core.
  8. 8. Cut the flesh into fine cubes.
  9. 9. Add the lemon zest and lemon juice to the pear mixture.
  10. 10. Sprinkle sugar and cinnamon over it.
  11. 11. Add the tonka paste and the starch.
  12. 12. Mix all filling ingredients together briefly.
  13. 13. Finely chop the chocolate.
  14. 14. Fold in the chocolate pieces and 50 g of sliced almonds into the filling.
  15. 15. Cover the prepared filling until you are ready to use it.
  16. 16. Preheat the oven to 190 °C fan-forced.
  17. 17. Line a baking tray with non-stick baking paper.
  18. 18. Sprinkle some flour onto a clean tea towel.
  19. 19. Roll out the first dough portion thinly on the towel.
  20. 20. Stretch the dough with your hands to the size of the towel.
  21. 21. Spread half of the filling over the dough.
  22. 22. Fold the sides of the dough over the filling.
  23. 23. Roll the strudel tightly using the towel.
  24. 24. Repeat the steps for the second dough portion and the rest of the filling.
  25. 25. Melt the butter in a small saucepan.
  26. 26. Brush the strudels with the melted butter.
  27. 27. Sprinkle the remaining 40 g of sliced almonds over them.
  28. 28. Bake the strudels in the preheated oven for about 30 to 35 minutes.
  29. 29. Dust powdered sugar over the warm strudel.
  30. 30. Serve the strudel warm or cold.
